TENDER TOMATO CHICKEN BREASTS
This is a light, juicy, flavorful dish. Being a mom of a 7 month old, I've learned to take a lot of shortcuts and still be able to cook quality food. This is quick, easy, and tasty. If you absolutely must use fresh veggies, that's ok, but frozen veggies, in my opinion, work a little bit better. Serve with rice, if desired. To kick it up a bit, add chopped green peppers in with the tomatoes.

- While the chicken is cooking, place the frozen mixed vegetables and water in a pot. Scoop about 3/4 cup liquid from the skillet, and mix into the pot. Tips for Cooking Sautéed Chicken with Tomatoes:
- Choose the right chicken: Use boneless, skinless chicken breasts or thighs for a quick and easy meal. For a more flavorful dish, use bone-in, skin-on chicken pieces.
- Season the chicken well: Don't be afraid to season the chicken generously with salt and pepper, as this will help to bring out the flavor of the dish.
- Use a large skillet: A large skillet will help to prevent the chicken from overcrowding and ensure that it cooks evenly.
- Cook the chicken over medium heat: Medium heat will help to prevent the chicken from burning and ensure that it cooks through without drying out.
- Don't overcrowd the skillet: If you overcrowd the skillet, the chicken will not cook evenly and will likely steam instead of sautéing.
- Add the tomatoes when the chicken is almost cooked: This will help to prevent the tomatoes from becoming mushy.
- Season the dish to taste: Once the chicken and tomatoes are cooked, season the dish with salt, pepper, and any other desired seasonings.
Conclusion:
Sautéed chicken with tomatoes is a quick and easy dish that is perfect for a weeknight meal. It is also a versatile dish that can be easily customized to your liking. With a few simple tips, you can create a delicious and flavorful sautéed chicken with tomatoes that your whole family will enjoy.
