PAN-SAUTEED SOLE
We used lemon sole, a flaky, mild-tasting white fish. At the market, look for flat fish such as sole or flounder; Pacific-caught are the most sustainable. Tilapia works well, too. Serve it with steamed new potatoes and sauteed spinach.

PAN SAUTEED SOLE/FLOUNDER PARMESAN
From A Guide to Modern American Cooking. It is called Grilled Sole Parmesan there but I changed the name to reflect the cooking style. This is not grilled! I am putting here for future use. ***For the reviewer who wanted advice on how to prevent fish from sticking: try a Teflon or other non-stick pan and use plastic spatulas to move the fish around gently to avoid breaking the fish. Hope this helps.

Steps:
- Season the grated cheese with pepper and paprika to taste.
- Dip fish in the eggs and then coat in the parmesan.
- Heat oil in frying pan and add fish cooking about 2 minutes on each side, depending on thickness, over medium-high heat,.
- Season with salt and pepper during cooking.
- Serve with lemon juice.
Tips:
- Choose the freshest fish possible. Fresh fish will have a mild, briny smell and firm, opaque flesh. Avoid fish that smells fishy or has slimy flesh.
- Use a light hand with the seasonings. Sole and flounder are delicate fish, so you don't want to overpower their flavor with too many spices or herbs. A simple combination of salt, pepper, and lemon juice is usually all you need.
- Cook the fish over medium heat. High heat will overcook the fish and make it tough. Medium heat will allow the fish to cook through gently and evenly.
- Don't overcrowd the pan. If you overcrowd the pan, the fish will steam instead of sautéing. This will make the fish mushy and bland.
- Cook the fish until it is just opaque in the center. Overcooked fish is tough and dry. When the fish is cooked through, it should flake easily with a fork.
Conclusion:
Sautéed sole or flounder is a quick and easy dish that is perfect for a weeknight meal. The fish is delicate and flavorful, and it pairs well with a variety of sides. Whether you serve it with rice, potatoes, or vegetables, sautéed sole or flounder is sure to be a hit. So next time you're looking for a simple and delicious seafood dish, give sautéed sole or flounder a try.
