Time 10m

Yield 6 servings

Number Of Ingredients 8

1 1/2 pounds baby spinach leaves
2 tablespoons good olive oil
2 tablespoons chopped garlic (6 cloves)
2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1 tablespoon unsalted butter
Lemon
Sea or kosher salt, optional

Steps:

  • Rinse the spinach well in cold water to make sure it's very clean. Spin it dry in a salad spinner, leaving just a little water clinging to the leaves.
  • In a very large pot or Dutch oven, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it's browned. Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes. Uncover the pot, turn the heat on high, and cook the spinach for another minute, stirring with a wooden spoon, until all the spinach is wilted. Using a slotted spoon, lift the spinach to a serving bowl and top with the butter, a squeeze of lemon, and a sprinkling of sea or kosher salt. Serve hot.

Tips:

  • Choose fresh, young spinach. Avoid wilted or yellowed leaves.
  • Wash the spinach thoroughly. Be sure to remove any dirt or grit.
  • Use a large skillet. This will help prevent the spinach from overcrowding and wilting.
  • Heat the olive oil over medium heat. Do not let it get too hot, or the spinach will burn.
  • Add the spinach to the skillet. Cook, stirring constantly, until the spinach is wilted and reduced in volume.
  • Season the spinach with salt and pepper. You can also add other seasonings, such as garlic, onion, or lemon juice.
  • Poach the eggs in a separate skillet. Bring a pot of water to a simmer and add a splash of vinegar. Crack the eggs into a small bowl and carefully slide them into the simmering water. Cook for 3-4 minutes, or until the eggs are cooked to your desired doneness.
  • Serve the sautéed spinach with the poached eggs. You can also add other toppings, such as crumbled bacon, chopped nuts, or grated cheese.

Conclusion:

Sautéed spinach with poached eggs is a quick, easy, and delicious meal that is perfect for breakfast, lunch, or dinner. It is also a great way to get your daily dose of vegetables. With just a few simple ingredients, you can create a dish that is both healthy and satisfying. So next time you are looking for a quick and easy meal, give sautéed spinach with poached eggs a try.
