Steps:
- 1. Preheat oven to 350 degrees
- 2. Place sliced tomatoes in colander in the sink in 1 layer. Sprinkle with salt/pepper and allow to drain for 10 minutes
- 3. Layer the tomato slices, basil and onion in the pie shell. Combine the grated cheeses and mayo then mix together. Spread the mixture on top of the tomato slices and bake for 30 minutes or until lightly browned.

This is a very old recipe that my Grandmother had saved. I only remember her making this a few times. As a kid I didn't like it. But now I sure do. Green tomatoes are just awesome! And this recipe makes them even better.

- 1. Preheat oven to 325 degres. Slice tomatoes about 1/2 inch thick and layer the slices in a buttered glass baking dish. Sprinkle tomatoes with lemon juice, then brown sugar and salt and pepper. In a medium skillet melt butter. Mix the bread crumbs and cracker crumbs together in the pan with the butter. Stir constantly and to mix and lightly brown the crumbs. Sprinkle this over the top of the tomatoes. Bake at 325 degrees until tomatoes are tender but not mushy (about 25-35 min). These may take a little longer depending on your tomatoes.

- Choose firm, green tomatoes for this recipe. Avoid tomatoes that are soft, bruised, or have blemishes.
- To easily remove the skin from the tomatoes, blanch them in boiling water for 30 seconds, then transfer them to an ice bath. The skins will slip right off!
