SAVORY COCONUT RICE

Savory Coconut Rice image

I love coconut rice, especially as a side for spicy grilled meats, but when I order it out, it's usually too sweet for my tastes, and more closely resembles dessert than a side dish. So, I decided to create a more savory version at home, which I eventually did, after a few short decades of testing.

SAVORY CURRIED RICE WITH DRIED FRUIT

Savory Curried Rice With Dried Fruit image

This rice not only looks beautiful, but it's bursting with savory flavors, and your house will smell delicious when you cook this! This is a recipe I adapted from Taste Of Home's Holiday Recipes. I made it my own by altering a few ingredients and adding others, but yield amount and cooking time/method are the same. I like to make the rice mix a day or two ahead to let all the flavors meld. This makes 2 batches of rice.

Provided by The Pantry Elf

Categories     Long Grain Rice

Time 30m

Yield 2 batches, 4-6 serving(s)

Number Of Ingredients 10

2 cups uncooked long grain rice
1 cup dried mixed fruit (I use a mixture of dates, apricots, and cranberries)
1 cup slivered almonds
1/2 cup raisins or 1/2 cup sultana
2 tablespoons dried onion flakes
4 teaspoons chicken bouillon granules
4 teaspoons curry powder
1 teaspoon salt
2 1/2 cups water
2 tablespoons butter

Steps:

  • In a large bowl, combine the first 8 ingredients. You can do this a day or two in advance to allow flavors to meld, but it's not necessary.
  • Combine water and butter in a saucepan; bring to a boil.
  • Add 2 cups rice mix, reduce heat, and simmer for 20 minutes, or until liquid is absorbed.
  • NOTE: I make this a complete meal by adding cooked chicken thighs. You can store this rice mix in an airtight container for up to 3 months.

Time 1h45m

Yield Serves 8

Number Of Ingredients 22

Vegetable oil for greasing pan
1/2 cup sugar
1/2 cup pistachios
1/2 large loaf of challah bread, cut into 1-inch dice (about 5 cups)
6 tablespoons unsalted butter, plus more for greasing
2 tablespoons toasted pine nuts
1/2 stick cinnamon
Several threads of saffron
1 teaspoon ground nutmeg
1 teaspoon mastic crystals (optional)
1 teaspoon grains of paradise
1/4 teaspoon sea salt
6 cups half-and-half, plus more for serving
1/4 cup candied citron peel
1 bay leaf
Kosher salt
1 cup carnaroli rice
3 tablespoons sugar
1/2 vanilla bean, seeds scraped
2 tablespoons dried currants, soaked in warm water
8 sun-dried tomatoes, soaked in warm water
1 cup fresh ricotta

Steps:

  • For the pistachio praline: Oil a baking sheet. In a small saucepan over medium-high heat, cook the sugar; swirl the pan as it begins to brown. When dark caramel, remove from the heat and stir in the pistachios. Spread on the baking sheet. Cool completely, then chop finely.
  • For the pudding: Grind the challah in a food processor. Add 3 tablespoons butter and pulse until mixed. In a mini processor, grind the pine nuts, then blend with 3 tablespoons butter. Using a spice grinder, grind the cinnamon, saffron, nutmeg, mastic, grains of paradise and sea salt. In a small pan, heat 1 cup half-and-half with finely chopped citron peel and bay leaf until steaming.
  • In a large pot, bring 2 quarts water and 1 tablespoon salt to a boil and add the rice. Blanch for 1 minute, then drain. Pour 5 cups half-and-half in a saucepan over medium heat until just steaming. Stir in 3 tablespoons sugar, the vanilla bean and seeds and the ground spices. Add the rice and simmer uncovered on low heat until the rice is al dente, 45 to 60 minutes. Drain well and discard the vanilla bean.
  • Butter a 3-inch-deep, 4-quart casserole. Drain the currants. Drain and coarsely chop the tomatoes. Spread half the rice in the casserole, then spread the ricotta and sprinkle with the currants, tomatoes and pine nuts. Spread with the remaining rice. Discard the bay leaf from the citron-peel infusion and pour over the rice. Cover with bread crumbs, then the praline. Bake until the topping is crisp, 15 to 20 minutes. If desired, gently fold in half-and-half when serving.

Tips:

  • Selecting the right rice variety: Different rice varieties have unique properties, textures, and flavors. Choose the type that best suits your dish, such as long-grain rice for fluffy texture, short-grain rice for stickiness, or aromatic rice like basmati for a fragrant aroma.
  • Proper rinsing and soaking: Rinsing rice before cooking helps remove excess starch, preventing clumping and ensuring even cooking. Soaking the rice, especially for long-grain varieties, can help reduce cooking time and yield fluffier results.
  • Measuring rice and water accurately: The rice-to-water ratio is crucial for achieving the desired consistency. Follow the recipe's measurements precisely or use a rice cooker with pre-measured markings to ensure perfect results.
  • Choosing the appropriate cooking method: Whether using a pot on the stovetop, a rice cooker, or an instant pot, select the cooking method that best suits your recipe and available equipment. Each method offers unique advantages and cooking times.
  • Seasoning and enhancing flavors: Add flavor and aromatic elements to your rice dish by using herbs, spices, vegetables, or broths. Experiment with different combinations to create a personalized and flavorful rice experience.

Conclusion:

Mastering the art of cooking rice opens up a world of culinary possibilities. From simple side dishes to elaborate main courses, rice serves as a versatile foundation for a wide range of cuisines. With careful selection of rice variety, precise measurements, and attention to cooking techniques, you can elevate your rice dishes to new heights.
