2 cups all-purpose flour
½ cup white sugar
1 tablespoon baking powder
1 teaspoon salt
½ teaspoon baking soda
1 ½ cups shredded Cheddar cheese
1 cup plain yogurt
2 eggs, beaten
¼ cup butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 large muffin cups.
  • Mix flour, sugar, baking powder, salt, and baking soda together in a large mixing bowl; stir Cheddar cheese into the flour mixture. Pour yogurt, eggs, and butter over the flour mixture; stir until the dry ingredients are just moistened. Spoon the batter into the prepared muffin cups.

I developed this recipe when I had an abundance of zucchini and wanted a muffin to have with a chicken dinner. These savory muffins are great as a quick breakfast too! They're a hit even with those who think they don't like zucchini!

1 ¾ cups all-purpose flour
1 ½ teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
¼ cup butter, melted
1 egg, lightly beaten
1 cup milk
1 cup shredded unpeeled zucchini
1 clove garlic, minced
¾ cup shredded Cheddar cheese
¼ cup freshly grated Parmesan cheese
4 slices bacon, cooked crisp and crumbled

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray 12 muffin cups with cooking spray.
  • Mix the flour, baking powder, baking soda, and salt in a bowl.
  • In another bowl, stir together the butter, egg, milk, zucchini, and garlic until well blended. Mix the flour mixture into the milk mixture, about 1/2 cup at a time, stirring between additions, until the flour mixture is incorporated. Fold in the Cheddar cheese, Parmesan cheese, and crumbled bacon, and pour the batter into the prepared muffin cups.

2 cups all-purpose or cake flour
2 teaspoons baking powder
½ teaspoon baking soda/bicarbonate of soda
½ teaspoon salt
½ teaspoon ground black pepper
¼ cup oil (See note 1)
1 ¾ cup buttermilk or plain yogurt (See note 2)
1 cup grated cheese (See note 3)
2 cups vegetables (chopped See note 4)

Steps:

  • Whisk the flour, baking powder, baking soda (bicarbonate of soda), salt and black pepper in a large bowl.
  • In a separate bowl, combine the oil and buttermilk.
  • Pour the oil mixture into the flour mixture and mix to combine.
  • Add in the grated cheese and 2 cups of any chopped veggies or other ingredients you prefer. I used feta, olives, red jalapenos, and chives.
  • Grease the muffin tin WELL. Even if you are using a non-stick pan, it should be well greased. I use cooking spray or lots of butter to grease the muffin tin. If you are lining the pan with paper cups, then those cups need to be sprayed as well.
  • Divide the batter in the muffin tin, filling each up to ¾ full.
  • Bake in a preheated oven of 320ºF ( 160ºC ) for between 20 to 25 minutes.
  • Remove from the oven and enjoy as is or with a spread of butter.
