Kheer is a sweet dessert-like dish. In Trinidad, we eat sawine every Eid. In India, kheer is eaten as a regular dessert.

1 teaspoon ghee (clarified butter)
2 ounces vermicelli, broken into 1/2-inch pieces
1 (12 fluid ounce) can evaporated milk
12 fluid ounces water
3 tablespoons sweetened condensed milk
¼ teaspoon ground cinnamon
3 tablespoons raisins
½ cup toasted almonds

Steps:

  • Heat ghee in a saucepan over medium heat. Add vermicelli; cook and stir until golden brown, 2 to 3 minutes. Pour evaporated milk and water over vermicelli; bring to a boil.
  • Stir sweetened condensed milk and cinnamon into vermicelli mixture; cook, stirring occasionally, until vermicelli is cooked and milk is thickened, 5 to 10 minutes.
  • Stir raisins into vermicelli mixture; cook until raisins are plump and mixture is thickened, about 5 minutes. Remove from heat and cool slightly. Serve garnished with almonds.

Sawine is a Muslim sweet for Eid from Trinidad and Tobago. I got that recipe from a sister from Trini. I haven't tried it yet but God Willing I will this year. There are also rice vermicelli available on the market, for those who eat Gluten-free.

200 g vermicelli (rice)
2 cups water
2 pieces cinnamon sticks
1/4 teaspoon salt
6 cups evaporated milk
1/4 cup sugar (or to taste)
1/4 cup raisins
1/2 cup cherries (chopped)
1/2 teaspoon vanilla

Steps:

  • 1) In a heavy skillet, parch vermicelli until golden brown. (It helps to break the vermecelli into small pieces and parch with some butter or ghee).
  • 2) In a large deep pot bring water, cinnamon and salt to a boil.
  • 3) Add vermicelli and cook on low heat until most of the water has evaporated and vermicelli is tender.
  • 4) Add milk, sugar to taste, almond, raisins and cherries and cook for a minute or two.
