1/2 Kirby cucumber, halved lengthwise and cut into 1/2-inch slices
1 pound large scallops

1/3 cup dry white wine (or reduced sodium chicken broth)
4 garlic cloves, minced

4 cups mushroom caps
3 medium red bell peppers, cut into 1 inch squares
3 medium green bell peppers, cut into 1 inch squares

1/4 cup fresh orange juice
2 tablespoons fresh lime juice
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper
1 large bunch fresh thyme
5 small oranges, cut into eighths
20 fresh bay leaves
