Tips for Making the Best Scallop Piccata with Sautéed Spinach:

  • Choose high-quality scallops. Fresh, dry scallops are essential for this dish. Avoid scallops that are slimy or have an off odor.
  • Sear the scallops properly. Sear the scallops in a hot skillet until they are golden brown and slightly caramelized. This will help to develop their flavor and prevent them from becoming tough.
  • Don't overcook the scallops. Scallops cook quickly, so it's important to not overcook them. Otherwise, they will become tough and rubbery.
  • Make sure the sauce is flavorful. The sauce for this dish is made with lemon juice, white wine, butter, and capers. It should be tangy, rich, and flavorful.
  • Serve the scallops immediately. Scallops are best served immediately after they are cooked. This will help to ensure that they are tender and juicy.

The scallops are seared until golden brown and then simmered in a flavorful sauce made with lemon juice, white wine, butter, and capers.
