Time 40m

Yield 4 serving(s)

Number Of Ingredients 11

1/2 lb fresh scallops or 1/2 lb frozen scallops
1 (10 ounce) package frozen chopped spinach
1/4 cup water
2 tablespoons dry white wine
1/4 teaspoon salt
1/4 teaspoon dried tarragon, crushed
black pepper
1 garlic clove, minced
1/3 cup canned evaporated skim milk
4 teaspoons all-purpose flour
2 tablespoons grated parmesan cheese

Steps:

  • Thaw scallops, if frozen. Cut any large scallops in half. Cook spinach according to package directions and drain really well. Keep warm.
  • Meanwhile, in a medium skillet, combine water, wine, salt, tarragon, pepper, and garlic. Bring to boiling and add scallops. Cover and simmer for 2 to 3 minutes or till scallops are opaque. Remove scallops from skillet with a slotted spoon. Set aside and keep warm.
  • In a small bowl, combine milk and flour. Stir into liquid in skillet. Cook and stir until thickened and bubbly. Add grated Parmesan cheese. Cook and stir for 1 minute longer.
  • Return scallops to skillet. Heat for 1 minute.
  • Serve with your choice of pasta or rice.

Tips:

  • Use high-quality scallops. Fresh, sea scallops are the best choice for this recipe. Avoid using frozen or pre-cooked scallops, as they will not have the same flavor or texture.
  • Cook the scallops properly. Scallops are very delicate, so it is important not to overcook them. Cook them for just a few minutes per side, or until they are opaque and cooked through.
  • Use a good quality white wine. The white wine used in this recipe should be a dry, unoaked wine. A good Sauvignon Blanc or Chardonnay would be a good choice.
  • Don't overcook the spinach. Spinach cooks very quickly, so it is important not to overcook it. Wilt the spinach for just a few minutes, or until it is bright green and tender.
  • Serve the scallops immediately. Scallops are best served immediately after they are cooked. This will ensure that they are at their best flavor and texture.

Conclusion:

Scallops Florentine is a delicious and elegant dish that is perfect for a special occasion. It is a relatively easy dish to make, but it is sure to impress your guests. The combination of tender scallops, creamy spinach, and flavorful white wine sauce is simply irresistible. If you are looking for a new and exciting way to prepare scallops, then this recipe is definitely worth trying.
