One 16-ounce bag of edamame is enough for both puree and salad; cook it all at once, and then divide it accordingly.

1/2 cup frozen shelled edamame, cooked according to package instructions
1/2 red bell pepper, stemmed, seeded, and finely diced (1/3 cup)
1 tablespoon toasted black sesame seeds
1 tablespoon fresh lime juice
1/2 teaspoon Asian chili paste, such as sambal oelek (see the Guide)
1/4 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
2 1/2 cups frozen shelled edamame, cooked according to package instructions
1/4 cup fresh lime juice (from 2 to 3 limes)
1/3 cup water
2 tablespoons whole fresh mint leaves
1/2 teaspoon Asian chili paste, such as sambal oelek
1/4 teaspoon coarse salt
1/2 teaspoon freshly ground pepper
12 sea scallops, tough muscles removed
1 teaspoon coarse salt
1/2 teaspoon freshly ground pepper
1 tablespoon extra-virgin olive oil
Lime wedges, for serving

Steps:

  • Make the salad: Combine edamame, bell pepper, sesame seeds, lime juice, chili paste, salt, and pepper.
  • Make the puree: Process edamame, lime juice, water, mint, garlic, salt, and pepper in a food processor until smooth. (The puree should be warm from the just-cooked edamame; reheat it in a saucepan over low heat if necessary.)

Pan Seared Scallops with Crab Salad and Carrot Puree image

8 ounces carrots, peeled and chopped
1 teaspoon honey
Salt and freshly ground black pepper
5 strips bacon
1 1/2 cups maple syrup
1 tablespoon cornstarch, optional
1 pound crab claw meat
1/4 cup julienned apple
1/4 cup julienned carrot
1/4 cup mayonnaise
2 tablespoons lemon juice
2 tablespoons diced red onion
Salt and freshly ground black pepper
6 scallops (size U8), dry pack
Salt and freshly ground black pepper
2 tablespoons grapeseed oil
2 tablespoons butter
6 small leaves romaine heart
3 scallions, julienned

Steps:

  • For the puree: In a small saucepot, bring 4 cups water to a boil. Add the chopped carrots, and boil until soft. Strain the carrots and reserve 1 cup of the cooking liquid.
  • Place the carrots in a blender with the honey, and puree. Adjust the consistency with the reserved cooking liquid. Season with salt and pepper, and cool completely.
  • For the syrup: In a saute pan, cook the bacon until crispy. Remove the bacon from the pan and drain on paper towels. Then chop the bacon and add it to a small saucepot with the maple syrup, and bring to a simmer. Reduce the syrup to a volume of 1 cup.
  • If the syrup is very runny, thicken with a slurry of the cornstarch mixed with 2 tablespoons water.
  • For the crab salad: In a bowl, combine crab, apples, carrots, mayonnaise, lemon juice and onion, and mix gently. Season with salt and pepper.
  • For plating: Sprinkle the scallops with salt and pepper. Heat a saute pan over high heat until smoking. Add the oil and then place the scallops in the pan. Sear until golden brown and the scallops release from the pan, about 3 minutes. Flip and cook for another minute. Add the butter to the pan and baste the scallops with the butter for about 1 more minute. Remove the pan from the heat and allow the scallops to rest.
  • On each serving plate, drag a spoonful of carrot puree across the plate. Place 2 ounces of crab salad at the center of each plate. Trim the romaine leaves into a diamond and place on top of the crab salad. Place the seared scallop against the lettuce leaf and drizzle 1 ounce of the bacon syrup with some bacon pieces over the scallop. Garnish with the scallions and serve.

6 ounces barilla plus pasta (any)
1 beaten egg
1 tablespoon water
1/2 cup whole wheat flour
1/2 teaspoon paprika
1/2 teaspoon black pepper
1 teaspoon seasoning salt
12 ounces fresh sea scallops (make sure they are real sea scallops, not artificial scallops cut from skate)
1 cup fresh mushrooms, chopped
1 cup chicken broth
2 garlic cloves, minced
1/2 teaspoon red wine vinegar
1 teaspoon soy sauce
1 cup frozen edamame

Steps:

  • Cut scallops in half or quarters depending on size.
  • Beat egg with water in bowl large enough to hold scallops.
  • Add scallops and stir to coat.
  • Drain off excess egg.
  • In a food storage bag mix flour, paprika, pepper and salt.
  • Add drained scallops to bag and shake to coat.
  • Heat a large frying pan over medium/low heat.
  • When hot, remove scallops from bag throwing away excess flour mixture and add scallops to hot pan that has been sprayed with olive oil cooking spray.
  • Cook scallops for about 5 minutes.
  • Remove scallops and put aside.
  • Meanwhile put pasta on to boil.
  • While pasta is cooking, mix together broth, garlic, vinegar and soy sauce.
  • Pour into the same pan that you cooked the scallops inches.
  • Bring to a boil and add mushrooms and edamame.
  • Cook for 5 minutes.
  • Add scallops and cook for 5 to 7 minutes more.
  • When pasta is done, drain and add to frying pan with other ingredients.
  • Stir to mix in pasta and serve.

1 clove garlic, peeled
1 6-inch sprig fresh rosemary
1/3 cup olive oil
4 cups frozen peas
1 tablespoon cornstarch

6 to 8 large sea scallops, each one halved to make two slim disks

  • In a small saucepan, combine the garlic, rosemary and oil. Place over medium-low heat until the oil starts to bubble. Turn off the heat and leave the mixture to infuse.
  • Place peas in a large pan of lightly salted water, and bring to a boil. Reduce heat to low and simmer until peas are tender but still bright green, cooked slightly longer than usual.
