Steps:
- Place potatoes in a medium saucepan; add enough water to cover by 1 inch. Add 2 tablespoons salt. Bring to a boil, then reduce heat to medium-high and cook until potatoes are easily pierced with the tip of a knife, 15 to 20 minutes. Meanwhile, whisk together pickling liquid, mustard, and sugar. Whisk in oil; season with salt and pepper. Stir in fennel fronds. Transfer potatoes to a bowl with a slotted spoon, and toss with 2 tablespoons dressing.
- Return water to a boil; add shrimp. Remove from heat and let stand, stirring occasionally, until shrimp are bright pink and opaque, 2 to 3 minutes. With a slotted spoon, transfer to an ice-water bath until cool. Drain well. Toss lettuce and sliced fennel with 2 tablespoons dressing; arrange on a platter. Top with potatoes, shrimp, cornichons, and eggs. Drizzle with remaining dressing; serve.
SCANDINAVIAN SUMMER VEGETABLE SOUP
This is a beautiful and delicious vegetable soup! Everyone at my home loves it, and guests always ask for the recipe. Don't be thrown off by the radishes...they do not have a strong taste in the soup at all, and have a wonderful taste when cooked in the soup. You can top it with shredded cheese if you like...Serve with crusty french bread or yeast rolls! Enjoy!

Tips:
- Mise en place: Before you start cooking, make sure you have all the ingredients and equipment you need. This will help you stay organized and prevent any scrambling.
- Use fresh, high-quality ingredients: The better the ingredients, the better the soup will taste. If you can, use organic vegetables and sustainably-sourced shrimp.
- Don't overcrowd the pot: If you add too many vegetables to the pot at once, they will not cook evenly. Add them in batches if necessary.
- Simmer, don't boil: Bring the soup to a boil, then reduce the heat to low and simmer for at least 30 minutes. This will help the flavors to develop.
- Season to taste: Add salt, pepper, and other seasonings to taste. You can also add a squeeze of lemon juice or a dollop of sour cream before serving.
Conclusion:
This Scandinavian vegetable soup with shrimp is a delicious and healthy meal that is perfect for a cold winter day. It is packed with vegetables, shrimp, and flavor.
