Who doesn't buy extra Halloween candy? Our chewy and fudgy brownies, which are made with a combination of bittersweet chocolate chips and cocoa powder, are topped with peppermint patties and candy eyes for a bite that will make you say boo!

1/2 cup (1 stick) unsalted butter, plus more for baking pan
1 cup all-purpose flour (spooned and leveled)
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon fine salt
1 1/4 cups sugar
1/2 pound bittersweet chocolate chips (1 1/2 cups)
3 large eggs
1 teaspoon pure vanilla extract
32 miniature chocolate peppermint patties, such as York
Candy eyes, chocolate chips, and icing pens, for decorating

Steps:

  • Preheat oven to 350 degrees. Lightly butter an 8-inch square metal baking pan and line with parchment paper, leaving a 2-inch overhang on all sides. In a large bowl, whisk together flour, cocoa powder, baking powder, and salt. In a medium saucepan, melt butter, sugar, and bittersweet chocolate over medium, stirring frequently, until smooth. Add to flour mixture and stir to combine. Stir in eggs and vanilla, then let cool to room temperature, 10 minutes.
  • Transfer batter to pan. Press 16 peppermint patties evenly into batter and, with a small offset spatula, evenly spread batter to completely cover patties.
  • Bake until cake is puffed and just set, about 35 minutes. Let cool on a wire rack, 25 minutes, then top with 16 peppermint patties. Let cool 25 minutes more, then decorate peppermint patties with candy eyes and chocolate chip ears. Refrigerate until chocolate is set, 5 minutes. Using parchment, lift cake from pan and cut into 16 squares. Decorate with icing pens.

1 box Betty Crocker™ fudge brownie mix
Water, vegetable oil and eggs called for on brownie mix box
1 container Betty Crocker™ Rich & Creamy dark chocolate, chocolate or milk chocolate frosting
2 large yellow gumdrops
1 large green gumdrop
1 small black gumdrop
Black shoestring licorice
6 candy corn

Steps:

  • Heat oven to 350°F. Line 2 (8-inch or 9-inch) round cake pans with foil; grease bottoms only with shortening or cooking spray.
  • Make brownie batter as directed on box. Divide batter evenly between pans.
  • Bake 24 to 26 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely.
  • Lift foil and brownie from pan; carefully remove foil. Cut 1 round as shown in diagram. Arrange uncut round and the pieces, top sides down, on large tray or foil-covered cardboard, 18x12 inches, to form cat. Frost cat, attaching pieces with small amount of frosting.
  • Cut thin slice from bottom of each yellow gumdrop; use slices for eyes. Cut thin slice from green gumdrop; use to make pupils. Use black gumdrop for nose and shoestring licorice for whiskers, mouth and from paws. Attach 3 candy corn on each paw for claws. Store loosely covered.

1 package fudge brownie mix (13-inch x 9-inch pan size)
1 can (16 ounces) chocolate frosting
2 large yellow gumdrops
1 large green gumdrop
1 large black gumdrop
2 pieces black shoestring licorice
6 candy corns

Steps:

  • Line two 9-in. round baking pans with parchment; coat with cooking spray and set aside., Prepare brownie mix batter according to package directions. Pour into prepared pans. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely; remove parchment., For cat's body, place 1 brownie circle on a covered board. From 1 side of the remaining brownie, cut a 1-in.-wide crescent-shaped slice; position tail on board. From the center of the opposite side, measure 2-3/4 in. toward the center. Make a vertical cut, forming a small half circle; cut in half and trim if desired, forming 2 ears. Position brownie with the flat side against the cat's body; trim sides of brownie as needed, forming the head. Add the ears. , Frost cat. Flatten yellow gumdrops. Cut 2 thin rounds from green gumdrop; position yellow and green gumdrops for eyes. Press black gumdrop into frosting for nose. Cut licorice into desired lengths for whiskers and a mouth; press lightly into frosting. Arrange candy corns at base of cat for toes.

Water, vegetable oil and eggs called for on brownie mix box
3/4 cup butterscotch-flavored chips, if desired
1/2 cup butter or margarine
1 cup packed brown sugar
1/4 cup milk
2 cups powdered sugar
Pretzel sticks
Assorted Halloween candies, gumdrops or shaped marshmallow pieces, such as bats, moons, pumpkins, ghosts

Steps:

  • Heat oven to 350°F. Line 13x9-inch pan with foil so foil extends about 2 inches over ends of pan. Grease bottom only of foil with shortening or cooking spray. In medium bowl, make brownie batter as directed on box--except stir in butterscotch-flavored chips. Spread in pan.
  • Bake as directed on box for 13x9-inch pan. Cool about 1 hour before frosting.
  • In 2-quart saucepan, melt butter over medium heat. Stir in brown sugar. Heat to boiling, stirring constantly. Reduce heat to low. Boil and stir 2 minutes. Stir in milk. Heat to boiling; remove from heat. Cool about 45 minutes or until lukewarm. Gradually stir in powdered sugar. If frosting is too thin, place saucepan of frosting in bowl of cold water. Beat frosting until smooth and thick enough to spread. If frosting becomes too thick, stir in additional milk, 1 teaspoon at a time.
  • Lift out foil and brownie from pan; carefully remove foil. Spread frosting over brownie. Arrange pieces of pretzel sticks to make tree and fence designs. Add candies to complete the "scary night" landscape. For brownies, cut into 6 rows by 4 rows. Store tightly covered.

1 cup butter, softened
2 cups sugar
2 eggs, beaten
1 tablespoon vanilla extract
3 cups all-purpose flour
1 cup baking cocoa
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 tablespoon salt
48 pieces candy corn
24 red cinnamon candies

Steps:

  • In a bowl, combine butter and sugar. Beat in eggs and vanilla. In a separate bowl, combine flour, cocoa, baking powder, baking soda and salt; gradually add to butter mixture. Roll dough into 1-1/2 inch balls. Place 3 inches apart on lightly greased baking sheets. Flatten with a glass dipped in sugar. Pinch tops of cookie to form ears. For whiskers, press a fork twice into each cookie. Bake at 350 degrees for 7 to 8 minutes, until almost set. Remove from oven; immediately press on candy corn for eyes and cinnamon candies for noses. Remove to wire racks to cool.
