PIKELETS (SCOTTISH PANCAKES)
My Aussie friend uses this recipe as her standard pancake recipe. Pikelets are the Scottish version of the southern British crumpet. They are also great for afternoon teas. Serve with fresh-squeezed lemon juice and sugar, or with butter and jam. I always thought that I had the best pancake recipe in the world until I tried these!

Tips:
- Use fresh, high-quality ingredients. This will ensure that your crumpets have the best flavor and texture.
- Make sure your buttermilk is at room temperature. This will help the crumpets rise properly.
- Don't overmix the batter. Overmixing will make the crumpets tough.
- Cook the crumpets over medium heat. This will prevent them from burning.
- Flip the crumpets only once. Flipping them too often will make them dry.
- Serve the crumpets warm with your favorite toppings. Butter, jam, and syrup are all classic choices.
