I had some flour tortillas to use up one day and decided to make some breakfast quesadillas. It's now one of my husband's favorites. I haven't made it for my grandkids yet, but I'll bet they will like it too. I don't always use the bacon, since we also enjoy these tortillas with just the eggs and lots of hot sauce.

CHORIZO SCRAMBLED EGGS

Chorizo Scrambled Eggs image

Categories     Egg     Pork     Breakfast     Brunch     Quick & Easy     Sausage     Gourmet     Sugar Conscious     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher

Yield Makes 4 servings

Number Of Ingredients 5

6 oz Spanish chorizo (spicy cured pork sausage) or 6 oz Mexican chorizo (spicy raw pork sausage)*
2 tablespoons vegetable oil if using Spanish chorizo
10 large eggs
Garnish: chopped fresh cilantro leaves
Accompaniment: warm corn tortillas

Steps:

  • If using Spanish chorizo, finely chop, then cook in oil in a 12-inch nonstick skillet over moderate heat, stirring, until browned, 4 to 5 minutes. If using Mexican chorizo, remove from casings and cook (without oil) in skillet, stirring and breaking up meat, until bubbling and completely separated, 4 to 5 minutes.
  • Whisk eggs together in a bowl and stir into chorizo. Cook, stirring, until eggs are scrambled and just set, about 5 minutes. Serve immediately.
  • Available at Latino markets.

Tips:

  • Use fresh ingredients: Always use the freshest eggs, chorizo, and vegetables you can find. This will make a big difference in the flavor of your quesadilla.
  • Don't overcrowd the pan: When cooking the chorizo, don't overcrowd the pan. This will prevent it from cooking evenly.
  • Use a good quality cheese: The type of cheese you use will also make a big difference in the flavor of your quesadilla. Use a cheese that melts well and has a good flavor, such as cheddar, Monterey Jack, or pepper Jack.
  • Don't overcook the quesadilla: Cook the quesadilla just until the cheese is melted and the tortilla is golden brown. Overcooking will make the quesadilla tough and chewy.
  • Serve immediately: Quesadillas are best served immediately after they are cooked. This will ensure that the cheese is still melted and the tortilla is crispy.

Conclusion:

Scrambled egg and chorizo quesadillas are a delicious and easy-to-make meal that is perfect for breakfast, lunch, or dinner. They are also a great way to use up leftover chorizo. With just a few simple ingredients, you can create a flavorful and satisfying meal that the whole family will enjoy.
