This recipe comes from the 1955 cookbook, German Cookery & I'm posting it to add to the Deutsch recipes for the ZWT6.

Number Of Ingredients 10

2 tablespoons unsalted butter, room temperature
2 tablespoons granulated sugar
4 eggs, separated
1 pinch salt
2 cups all-purpose flour
1 cup milk
1 tablespoon unsalted butter (again)
1 tablespoon granulated sugar (again)
1 teaspoon ground cinnamon
2 cups fruit (cut into bite-size pieces)

Steps:

  • Cream the 1st 2 tablespoons of butter until frothy, then add, one after another, the sugar, egg yolks, salt, flour & milk.
  • Beat egg whites until stiff, then carefull fold them into the batter.
  • In a large skillet, melt the final tablespooon of butter, then pour the batter onto the butter, frying it, 3 to 4 minutes on each side until golden brown.
  • With 2 forks, chop up the resulting pancake.
  • Mix together the 1 tablespoon of sugar & 2 teaspoon cinnamon.
  • Serve on a hot platter, sprinkled with the cinnamon sugar & garnished with pieces of apple, cherries or other fruits, dried or fresh.

My husband found this recipe after our daughter came home from a friend's house reporting she had "Scrambled Pancakes". They were a hit and we've enjoyed them ever since. I had some kids over this morning and was in a panic when I couldn't find the recipe on my cluttered desk. I searched Recipezaar to no avail. I finally went back to my desk and found it. I'm posting this so I never need to worry about losing it again. I love it because this recipe adds extra protein to what is usually a carbohydrate packed meal. I've even sneaked in a few extra eggs on occasion. This is so easy, even the kids can make it!

4 eggs
2 cups milk
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons cooking oil

8 lg eggs - 3 tbls heavy cr or milk - 6 tbl chopped chives - 1 tbl olive oil - 4 oz chopped cold smoked salmon - 1 tbl finely minced shallots - 1/4 cup sr cr - black pepper
2 russet pots baked & chilled - 2 lg eggs - 1 tbl minced shallots - 3 tble grated asiago cheese - 2 tbl sliced gr onions - 1 tbl flour - 3/4 tsp kosher salt - 1/2 tsp black pepper - 1/2 tsp baking soda - 2 tbl olive oil

Steps:

  • EGGS: whisk together eggs, cream & 3 tbl chives - heat oil in skillet over med heat - cook eggs, stirring, until the hold together but are still soft - add smoked salmon & cook 1 min until eggs are cooked but still moist - remover pan fr heat PANCAKES: peel & grate pots - whisk together eggs & next 7 ingred - stir in pots, mix gently - heat 2 tbl oliv oil over med heat - spoon pot mix into skillet forming pancakes about 3 " in diameter - cook 3-4 mins, turn once, until golden brown spoon eggs on pancakes - combine shallots & sr cr & dollop on eggs - sprinkle c chives & pepper

  • Pour 1/4 cup of batter onto the hot skillet for each pancake.
