⅓ cup water

Steps:

  • Stir the unbeaten egg whites, sugar and water together in the top of a double boiler. Cook over briskly boiling water, beating with a rotary beater for 7 minutes or until frosting looks fluffy and holds a soft, gentle shape.
  • Remove from boiling water, add vanilla extract and continue beating until frosting holds definite peaks.
  • Spread between layers of cake and then frost the sides and top.

2 egg whites, unbeaten
1 1/2 cups brown sugar
5 tablespoons ice water
1/8 teaspoon salt
1 1/2 teaspoons dark corn syrup
1/8 teaspoon cream of tartar
1 teaspoon vanilla

Steps:

  • Put first six ingredients in top of double boiler and place over boiling water.
  • Beat on low speed until ingredients are thoroughly mixed. Cook on medium heat. Cook beating constantly on high speed until icing stands by itself.(about 5 min.) Remove from heat. Add 1 teas. vanilla. Beat for 1 more minute.

This is an old recipe my Grandma gave me years ago when I first started baking....Very Good !

2 - egg whites , unbeaten
1 1/2 cup(s) brown sugar, firmly packed
5 tablespoon(s) water
1 teaspoon(s) light corn syrup
1 teaspoon(s) vanilla

Steps:

  • Combine egg whites , brown sugar , water and corn syrup in top of a double broiler ; mix well
  • Place top of double broiler over boiling water and beat constantly with a electric hand mixer until mixture forms peaks ; about 7 minutes.
  • Remove from heat of the boiling water and add the vanilla and continue to beat until frosting is cool and thick enough to spread.
  • Makes enough frosting to frost tops and sides of two 9" cakes. (a layer cake )

Tips:

  • To achieve a smooth and creamy frosting, make sure all ingredients are at room temperature before mixing.
