1 1/2 pounds sugar or snap peas
2 tablespoons olive oil
24 sea scallops, about 1 1/4 pounds total weight; if too large, cut them in half crosswise
2 tablespoons finely chopped shallots
1 teaspoon finely chopped garlic
3 sprigs fresh thyme or 1/2 teaspoon dried
1/4 teaspoon red hot-pepper flakes
2 tablespoons anise-flavored liqueur, like Ricard or Pernod
1 tablespoon butter
1 tablespoon fresh lemon juice
Salt and freshly ground pepper to taste
4 tablespoons finely chopped coriander or parsley

Steps:

  • Preheat the broiler or prepare a charcoal grill.
  • Place the peppers under the broiler or on the grill. Cook them on all sides until the skin is well charred. When cool enough to handle, split the peppers in half, core them and discard the charred skin and the seeds. Rinse in cold water. Pat dry with papers towels and cut them into 1/2-inch cubes.

1 pound sea scallops, rubbery appendage from the side of each sea scallop removed cornstarch for dusting scallops
1 tablespoon each of Oriental sesame oil and vegetable oil
1 tablespoon rice vinegar
1 tablespoon chili paste with garlic
2 teaspoons soy sauce
2 tablespoons snipped chives

Steps:

  • Heat the sesame and vegetable oils in a skillet over moderate heat. Very lightly dust the scallops with cornstarch and saute them, on one side only until quite crusty on one side. When crusty, put a lid on the skillet and finish steaming the scallops by steaming them without overcooking them.
  • Remove them from skillet and transfer them, browned side on top of the lentils. To the skillet add the rice vinegar, chili paste and 2 teaspoons soy sauce and reduce until syrupy, spoon over the chili scallops and dust with chives.

2 1/2 lbs sea scallops
salt & freshly ground black pepper
1 cup dry white wine
1/4 cup medium-dry sherry
1 cup heavy cream
1/2 cup pureed red pepper
1/4 cup unsalted butter (1/2 stick)
2 lbs red bell peppers, diced
2 tablespoons sugar
2 tablespoons cider vinegar
1 teaspoon paprika (sweet Hungarian preferred)
1/2 teaspoon red pepper flakes
1 pinch salt

Steps:

  • For Sea Scallops.
  • Heat butter in heavy large skillet over high heat.
  • Add scallops, salt and pepper and stir until just opaque, 3 to 4 minutes.
  • Transfer scallops to bowl, using slotted spoon.
  • Add wine and sherry to skillet and boil until reduced to syrup, stirring frequently, about 7 minutes.
  • Whisk in cream and any juices in scallop bowl.
  • Boil until thickened to sauce-like consistency, stirring occasionally.
  • Whisk in Red Pepper Puree and heat through.
  • Stir in scallops, adjust seasoning and serve immediately.
  • For Red Pepper Puree (makes about 1 cup).
  • Melt butter in heavy small saucepan over low heat.
  • Stir in all remaining ingredients, cover and cook until very soft, stirring occasionally, about 50 minutes.
  • Uncover pan, increase heat to medium and stir until all liquid evaporates and peppers just begin to brown, about 10 minutes.
  • Puree peppers through medium blade of food mill, discarding skins.
  • Can be stored in the refrigerator 1 week or frozen.
  • Peppers can also be charred and skins removed.
  • Proceed with recipe and puree in blender or processor.

2 tablespoons olive oil
1 sweet red pepper, cored, seeded and cut into 1/2-inch pieces
1/4 pound snow peas, trimmed and rinsed
1/4 teaspoon hot red pepper flakes
Salt and freshly ground pepper to taste
1 1/4 pounds sea scallops, cut into 1/2-inch cubes
4 tablespoons shallots or scallions, chopped fine
3 tablespoons Ricard or any other anise-flavored liqueur
2 tablespoons fresh lemon juice
4 tablespoons fresh coriander or fresh basil, chopped coarse

Steps:

  • In a large nonstick skillet or wok, heat 1 tablespoon of the butter and 1 tablespoon of the oil over medium-high heat. Add the red pepper pieces and the snow peas. Cook, stirring and tossing, about 4 minutes. Season with pepper flakes, salt and pepper.

knob of fresh root ginger
handful coriander stems or leaves
2 garlic cloves
4 tbsp vegetable oil , plus extra for cooking
20 scallops
sweet chilli sauce , to serve (recipe below)

Steps:

  • Place the ginger, coriander and garlic in a pestle and mortar, then pound to a paste. Add the oil and mix through. Pour over the scallops and rub in until they are covered with the mixture. Thread each scallop onto a skewer (see Know-how, below). Can be done up to 1 day in advance.
  • To cook, heat a non-stick frying pan until really hot. Place a couple of skewers in the pan and cook for 2 mins, until starting to turn golden. Turn over, drizzle with more oil if needed, then cook for another min. Serve with sweet chilli sauce.

3 tablespoons extra-virgin olive oil (EVOO)
2 shallots, chopped
Salt and freshly ground black pepper

16 sea scallops, drained and trimmed

  • Heat a large nonstick skillet over medium-high heat. Add 2 tablespoons of the EVOO (twice around the pan) and the chopped shallots. Cook the shallots for a minute or so, season with salt and pepper, and combine with the parsley and capers. Add the wine and golden raisins. Simmer for 3 minutes, then transfer to a bowl and reserve.
  • Wipe out the pan and return to the heat, raising the heat to high. Season the scallops with salt and pepper. Add the remaining tablespoon of EVOO to the very hot pan and immediately place the scallops in the pan. Sear the scallops in a single layer, allowing them to caramelize, 2 minutes on each side. Add the reserved caper-raisin mixture along with the lemon juice. Turn the heat back a bit and cook for 1 to 2 minutes. Remove the scallops from the pan and arrange on a serving platter. Remove the pan from the stove, add the butter, and shake the skillet until the butter has completely melted. Pour the sauce over the scallops and serve with the bread.

3 tablespoons mirin
2 tablespoons rice vinegar
1/3 cup white miso
1 tablespoon finely grated ginger

10 ounces dried soba noodles
36 medium asparagus spears, coarse woody ends snapped or cut off
18 sea scallops
Kosher salt and freshly ground black pepper
12 walnut halves, lightly toasted and coarsely chopped

Steps:

  • In a bowl, whisk together the sugar, sake, mirin, and rice vinegar until the sugar is completely dissolved. Add the white miso, ginger, and 1 tablespoon of the oil and whisk until well combined. Set the miso glaze aside.
