4 cups whole milk

12 ounces lump crabmeat
30 large shrimp (21/25 count), peeled and deveined

3 cloves garlic, sliced
3 pounds (cooked weight) cooked fettuccine
1 tablespoon lemon juice
1/4 cup chicken stock
1/2 cup heavy cream
3 large egg yolks
2 tablespoons chopped chives

  • For the bechamel sauce: Melt the butter in a saucepan. Whisk in the flour and cook for 2 to 3 minutes, stirring constantly. Slowly whisk in the milk. 9 lasagna noodles, cooked and drained

I let it cook for about 2-3 minutes and then proceed. This dish can be served over pasta and also over rice.

1/2 lb cooked shrimp, small
1/2 lb imitation crabmeat, cut up into small chunks
3 tablespoons butter

1 cup water

2 cups heavy cream

1/8 cup chopped tiger shrimp (but chunky)

  • Dissolve bouillon in warm water; set aside.

  • For the roasted garlic: Preheat the oven to 350 degrees F. Using a basting brush, coat the garlic with the olive oil, place on a baking sheet, cover with aluminum foil and roast until the garlic lightly browns and softens to the touch, about 1 1/2 hours. 1/2 cup butter (1 stick)
4 garlic cloves, finely minced
3 tablespoons all-purpose flour
1 1/2 cups milk
4 ounces cream cheese, softened, cubed
1 cup parmesan cheese, grated
1 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon dried parsley
1 lb linguine (or use your favorite pasta)
2 tablespoons butter
1/2 lb shrimp, peeled, deveined and tails removed
1/2 lb sea scallops
1/2 teaspoon salt
1/2 cup broccoli floret
1/2 lb crabmeat, cooked

Steps:

  • In a medium size skillet, melt the butter over medium heat. Add the garlic and cook until aromatic, (about 2 minutes), stirring constantly, and taking care not to let the garlic burn.
  • Sprinkle in the flour and whisk for about 1 to 2 minutes, just to get the flour a little heat and mix with the butter and garlic. Slowly whisk in the milk and cream cheese, whisking until the mixture is smooth.   • In a large size Dutch oven or large size sauce pan, over high heat, bring 6 to 8 cups of water to a boil, add a dash of salt and about a tablespoon of oil to the water. Once the water is a consistent rolling boil, add your pasta and reduce heat to medium. Boil pasta until al dente, (about 8 to 12 minutes), stirring occasionally to keep the pasta from sticking together.
  • In a medium size skillet, add 2 tablespoons butter over medium-high heat, add shrimp and scallops and salt, sauté until shrimp turn an orange color, now, quickly and gently fold in the broccoli and crabmeat.
  • Add the Alfredo sauce to the Al dente pasta, toss well to coat the pasta in sauce and then gently fold in the seafood mixture. Serve hot.

This looks like it should be horribly difficult, but it's really simple. If you are a beginner cook and REALLY want to impress people, this is the recipe for you. I use fresh garlic and garlic powder - feel free to cut back on either. We actually prefer this made with surimi (fake crab meat) rather than fresh crab, but either is fine. Make sure the crab is picked over for shells. Feel free to toss in some scallops too - just saute them for a few minutes in some butter first. Substitute 1 box of chopped broccoli, defrosted, for the spinach, if desired, or omit entirely.

1/2 cup butter
3 garlic cloves, minced
1/2 cup flour
2 cups milk
2 1/2 cups chicken broth
2 cups shredded mozzarella cheese
1/2 cup finely chopped onion
1 teaspoon fresh basil, minced
1 teaspoon dried oregano, minced
1 egg
1 1/2 cups ricotta cheese
1 tablespoon garlic powder
1 tablespoon onion powder
1/2 teaspoon black pepper
1 -10 oz.box frozen chopped spinach, defrosted, drained and squeezed
1/2 lb crabmeat
1/2 lb cooked shrimp, shelled and deveined
1/2 cup grated parmesan cheese or 1/2 cup romano cheese
1 lb uncooked lasagna noodle

Steps:

  • Preheat oven to 350 deg. F.
  • Melt butter in medium saucepan over low heat; add garlic.
  • Remove from heat.
  • Stir in flour, stir until smooth.
  • Stir in milk and broth and return to heat. Bring to boil, stirring constantly. Reduce heat to low.
  • Stir in mozzarella, onions, basil and oregano. (add SALT if desired).
  • Cook over low heat, stirring constantly, until cheese is melted. Set aside.
  • Beat egg, and add ricotta. Mix till smooth. Add pepper, garlic powder and onion powder.
  • Spread a thin layer (about 1 cup) of cheese sauce in 13x9-inch baking dish.
  • Top with 3 or 4 uncooked noodles.
  • Spread 1/2 of ricotta cheese over noodles.
  • Sprinkle all of spinach over cheese, trying to avoid clumps.
  • Sprinkle with 1/2 of shrimp and crab.
  • Pour about 1 cup cheese sauce over, and top with 3-4 uncooked noodles.
  • Repeat layers with remaining ricotta cheese, seafood and a final layer of uncooked noodles. Top with all of remaining cheese sauce.
  • Sprinkle with parmesan or romano cheese.
  • Bake, uncovered for about an hour.
  • Let stand 10 minutes before serving.

3 cups chopped Hawaiian chile or other fresh chile
2 tablespoons chopped garlic
2 tablespoons salt
White wine vinegar, to taste
1 quart heavy cream
1 pound scallops
1 pound shrimp
2 tablespoons butter
1 tablespoon minced garlic
1 pound crab meat
3 cups grated mozzarella, plus additional for topping
3 cups ricotta
2 cups mascarpone
1 cup grated Parmesan plus 2 ounces Parmesan, grated
Twenty 4-inch sheets fresh pasta
8 ounces heavy cream

Steps:

  • For the Hawaiian chile cream: Combine Hawaiian chiles, garlic, salt and enough vinegar to result in a paste in food processor and process until smooth. This mixture can be used immediately, but it will be harsh. For best results, age in a jar for 6 months to 1 year.
  • Mix 1 tablespoon aged Hawaiian chile concentrate with the cream for the Hawaiian chile cream base.
  • For the alfredo: Chop scallops and shrimp, then saute in the butter with the garlic in a 10-inch nonstick pan, along with 1 tablespoon Hawaiian chile cream, until the shrimp are pink and done. Transfer to an 8-quart mixing bowl.
  • Preheat the oven to 400 degrees F.
  • Mix crab, mozzarella, ricotta, mascarpone and 1 cup Parmesan into the scallop and shrimp mixture until fully mixed.
  • Spread mixture on a pasta sheet and roll up. Repeat with remaining filling and pasta sheets. Place seam-side down in a baking dish.
  • Top with some mozzarella and bake for 8 minutes.
  • Meanwhile, stir together heavy cream and 1 tablespoon Hawaiian chile cream in a small saucepan and bring to a boil. Add remaining 2 ounces Parmesan and mix well. Let reduce to thicken, then turn off heat.
  • Serve cannelloni over Hawaiian chile alfredo sauce and enjoy.
