1 (16 ounce) package linguine pasta
1 tablespoon olive oil
4 cloves garlic, minced
1 small red onion, minced
1 tablespoon olive oil
2 tomatoes, seeded and diced
3 green onions, chopped
1 (8 ounce) can crushed tomatoes
1 tablespoon tomato paste
1 teaspoon dried oregano
1 teaspoon ground thyme
2 pounds mussels, cleaned and debearded
1 pound uncooked medium shrimp, peeled and deveined
1 cup dry white wine
2 teaspoons lemon juice
1 lemon - cut into wedges, for garnish

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink.
  • Heat 1 tablespoon of olive oil in a skillet over medium heat. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Heat another tablespoon of olive oil in a large skillet over medium-low heat. Stir in diced tomatoes and green onion; cook and stir until the tomatoes have softened. Stir onion mixture into the tomatoes, then add crushed tomatoes, tomato paste, oregano, and thyme. Simmer for 5 minutes. Stir in mussels and shrimp, then pour in the wine and lemon juice. Cover and increase heat to high. Cook until shrimp have turned pink and mussels have opened, discarding any that have not opened. Serve over pasta and garnish with lemon wedges.

18 uncooked jumbo pasta shells
1 tablespoon margarine or butter
1 medium onion, chopped (1/2 cup)
1/2 cup chopped bell pepper
1/2 pound asparagus, cut into 1-inch pieces (1 1/2 cups)
1 1/2 cups frozen cooked large salad shrimp, thawed
2 cans (6 ounces each) crabmeat, drained (1 3/4 cups)
1 jar (17 ounces) Alfredo pasta sauce
2 tablespoons chopped fresh or 1/2 teaspoon dried basil leaves
1/4 cup shredded Parmesan cheese

Steps:

  • Heat oven to 350°. Spray rectangular baking dish, 13x9x2 inches, with cooking spray. Cook and drain pasta shells as directed on package.
  • While shells are cooking, melt margarine in 12-inch nonstick skillet over medium-high heat. Cook onion and bell pepper in margarine 2 to 3 minutes, stirring occasionally, until crisp-tender. Stir in asparagus. Cover and cook 3 to 5 minutes, stirring occasionally, until asparagus is crisp-tender; remove from heat. Stir in shrimp, crabmeat, 1/2 cup of the pasta sauce and half of the basil.
  • Spread about 1/4 cup of the remaining sauce over bottom of baking dish. Fill each cooked pasta shell with about 2 tablespoons of the seafood mixture. Arrange in dish. Spoon remaining sauce over shells. Sprinkle each filled shell with Parmesan cheese and remaining basil. Bake uncovered 25 to 30 minutes or until bubbly.

This is a recipe I found on AllRecipes. I've changed it a bit to suit my family's tastes. It is a WONDERFUL sauce that truly enhances the seafood you use in it. I choose to use primarily scallops and calamari rings with a bit of shrimp in it, however, you can probably add any seafood you like to it and still have it come out wonderful! Serve this one up with some fresh bread and you'll be in heaven!

4 tablespoons olive oil, divided
8 garlic cloves, minced
2 shallots, minced
3 cups tomatoes, diced (can use canned but I prefer fresh!)
8 ounces tomato sauce
1 teaspoon crushed red pepper flakes (or to taste, I do more!)
1/2 teaspoon salt
3/4 cup red wine (DRY!, Cab, Zin or Syrah)
3 ounces tomato paste, half can
1 lb spaghetti (or linguine)
8 ounces bay scallops
8 ounces squid rings
4 ounces shrimp (peeled and tails removed)
1 tablespoon fresh parsley (chopped, to taste)
1 tablespoon fresh basil (chopped, to taste)
pepper, to taste

Steps:

  • In a large saucepan, heat 2 tablespoons of the olive oil with the garlic and shallots over medium heat.
  • When the garlic starts to sizzle, pour in the tomatoes and tomato sauce.
  • Season with salt and red pepper.
  • Bring to a boil.
  • Lower the heat, add the red wine and tomato paste and simmer for 30 minutes, stirring occasionally.
  • Meanwhile, bring a large pot of lightly salted water to a boil.
  • Cook pasta for 8 to 10 minutes, or until al dente; drain.
  • In a large skillet, heat the remaining 2 tablespoons of olive oil over high heat.
  • Add the shrimp, calamari and scallops.
  • Cook for about 4 minutes (or until done), stirring frequently, or until the shrimp turn pink.
  • Add seafood to the tomato mixture, and stir in the parsley.
  • Cook for 3 to 4 minutes, or until the sauce just begins to bubble.
  • Serve sauce over pasta.

  • In a medium skillet, saute 1 garlic clove in 1 tablespoon butter for 1 minute. Add the tomatoes, parsley, basil and tarragon; saute 2 minutes longer. Add the broth; bring to a boil. 1 tablespoon red chili flakes
1 pound Campari tomatoes, halved
1 Anaheim chile pepper, halved and seeded
1/4 teaspoon kosher salt
2 lobster tails
1 pound linguini
8 ounces large shrimp, shelled and deveined
Kosher salt
2 shallots, finely chopped
1 clove garlic, finely chopped
1/2 cup white wine
8 ounces clams, scrubbed
3/4 cup freshly grated Parmesan
2 tablespoons freshly chopped parsley
1 tablespoon unsalted butter
Zest of 2 lemons
Freshly ground black pepper

Steps:

  • For the chili oil: Combine the oil and crushed red pepper flakes in a heavy small saucepan. Cook over low heat until a thermometer inserted into the oil registers 180 degrees F, about 5 minutes. Strain the oil into a heatproof container.
  • For the spicy tomato sauce: Heat a large nonstick grill pan over medium-high heat. Drizzle the tomatoes and chile with 2 teaspoons of the chili oil and sprinkle with the salt. Grill until charred and softened, 4 minutes per side. Transfer the tomatoes to a bowl. Coarsely chop the chile, then add to the bowl with the tomatoes.
  • For the pasta: Bring a large saucepan filled with salted water to a boil over medium-high heat. Add the lobster tails and cook until the shells turn red and the meat is opaque, 4 minutes. Transfer the tails to a cutting board. Continue to boil the water and add the linguine. Cook until the pasta has begun to soften but is still firm to the bite, stirring occasionally, 6 minutes. Drain, reserving 1/4 cup of the cooking water.
  • While the pasta is cooking, prepare the seafood. Gently cut through the top of the lobster shells using scissors to remove the tail meat, then slice each tail in half lengthwise. Transfer to a large bowl and add the shrimp. Drizzle over 1 1/2 tablespoons of the chili oil and 1 teaspoon salt and toss to coat.
  • Heat a large nonstick grill pan over medium-high heat. Grill the lobster tails and shrimp until cooked through, 4 minutes per side. Transfer the shrimp to a large bowl. Chop the lobster into 2-inch pieces and combine with the shrimp.
  • Heat 2 tablespoons of the chili oil in a large saucepan over medium-high heat. Add the shallots, garlic and 1/2 teaspoon salt and cook, stirring occasionally, until softened, about 4 minutes. Add the spicy tomato sauce and white wine and bring to a boil. Add the clams and cook, covered, until they open, 4 to 6 minutes.
  • Add the pasta and reserved cooking water to the pan along with the Parmesan and toss to coat. Stir in the parsley, butter, lemon zest and salt and black pepper to taste. Add in the shrimp and lobster and drizzle with the remaining chili oil.

I love the flavors in this pasta salad with the addition of the lemon, shrimp and Old Bay Seasoning! I often substitute whole wheat pasta in this dish... I also double the mayonnaise, Old Bay seasoning and lemon, adding half when I initially make it, then just before serving I add some more, so it isn't dry after sitting in the fridge for flavors to meld... Sometimes I just double up on the shrimp or the crabmeat instead of using both together... Either way, this recipe is a KEEPER for sure!

This recipe is adapted from a Silver Palate cookbook; the main difference is that I took out the squid rings! I've been making it for 20 years. It's a delicious spring or summer dinner, and is a pretty company dish. Serve with a lettuce & tomato salad, and a loaf of crusty bread - sublime! It's easy to make, and is quick unless you have to shell the shrimp. You can use any type of pasta, but the small shells are best because when the salad gets mixed together, the peas nestle into the shells and look very cute!

1 lb medium raw shrimp, shelled and deveined
1 lb bay scallop, rinsed
1/2 lb small shell pasta (or another interesting shape such as twists)
1 cup frozen tiny peas, thawed
1/2 cup diced sweet red pepper
1/2 cup purple onion, finely chopped
1/2 cup olive oil
1 cup fresh basil leaf
3 tablespoons lemon juice (freshly squeezed)
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup Greek olive

Steps:

  • Bring a large pot of salted water to boil, drop in the shrimp and scallops, cook for one minute, and drain immediately.
  • Bring another large pot of salted water to boil. Cook the pasta as directed on the package, until tender but not mushy. Drain.
  • Toss the cooked pasta and seafood in a large bowl (make sure they are both well drained).
  • Add the peas (no need to cook them), red pepper, and onion, and toss.
  • Place dressing ingredients (olive oil, basil leaves, lemon juice, salt, and pepper) in a food processor bowl fitted with a metal blade. Process until basil is very fine. Pour over the pasta/seafood mixture and mix well. Taste and add salt, pepper, and/or lemon juice as necessary.
  • Place the salad in a serving bowl or mound it on a platter. Scatter with greek olives.
  • Serve immediately, or cover and refrigerate. Salad tastes better when at room temperature, so if refrigerating until later, be sure to take it out of the fridge for 30 minutes before serving.

This is a quick and easy seafood pasta recipe with shrimp in a cream sauce. I came up with it the other day when I had unexpected dinner guests and only had some frozen shrimp in the freezer. It came out so good that it is now one of my go-to recipes.

1 (16 ounce) package dry fettuccine pasta
¼ cup olive oil
4 cloves garlic, minced
1 cup dry white wine
3 tablespoons tomato paste
1 ½ pounds medium shrimp - peeled, deveined, and cut into 1/2-inch pieces
1 cup heavy whipping cream
1 pinch salt and freshly ground black pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes. Drain.
  • Heat olive oil in a saucepan over medium heat and cook garlic until fragrant, 1 to 2 minutes. Stir wine and tomato paste together in a small bowl; add to the saucepan. Simmer over low heat until sauce starts to thicken, about 10 minutes. Stir shrimp into the sauce. Cook until shrimp are pink, 3 to 5 minutes.
  • Remove about 2/3 of the shrimp with a slotted spoon and put in the bowl of a food processor; pulse until pureed. Return pureed shrimp to the saucepan and stir in heavy cream. Heat until warm, about 5 minutes. Season with salt and pepper. Serve with the fettuccine.

1 small zucchini, quartered and sliced
1 cup julienned carrots
1 small onion, chopped
1 tablespoon olive oil
1 garlic clove, minced

2 tablespoons butter
1/2 teaspoon salt
1/8 teaspoon pepper
1 pound cooked medium shrimp, peeled and deveined
2 plum tomatoes, chopped
1 can (6 ounces) crab, drained
4 ounces imitation crabmeat, chopped
3 green onions, sliced

Steps:

  • Cook linguine according to package directions. Meanwhile, in a large skillet, saute the zucchini, carrots and onion in oil until crisp-tender. Add garlic and pepper flakes; cook 1 minute longer. Stir in the cream, cheese, butter, salt and pepper., Bring to a gentle boil; cook for 1-2 minutes or until slightly thickened. Add the shrimp, tomatoes, crabmeat and green onions. 2 cups milk
2 tablespoons butter
2 tablespoons flour
1/2 teaspoon Old Bay Seasoning
nutmeg
1 -2 tablespoon olive oil
6 ounces red onions, chopped
4 cloves garlic, minced
5 ounces snow peas, slice on an angle
1 1/2 lbs lobsters, cut into the same size as shrimp or 1 1/2 lbs crab, all shelled and cleaned
1/2 teaspoon Old Bay Seasoning
2 tablespoons parsley, chopped

1 lb angel hair pasta, cooked as directed on box

  • In a pot melt butter and add flour stir to blend add milk, 1/2 old bay, and nutmeg stir and simmer till thickened.

10 mussels
15 clams
20 medium green shrimp
1 boneless atlantic salmon fillet (or some boneless fillet not strong in taste)
4 baby octopus (they are sold cleaned, just "bashed" them with a mullet to get them soft. 1 calamari tube (Mar)
1 (14 1/2 ounce) can crushed tomatoes
2 garlic cloves, chopped
1 small onion, chopped
1/4 red capsicum, chopped
1/2 ground basil
1/2 ground thyme
1 pinch oregano
salt
pepper (optional)

Steps:

  • Mix all marinade ingredients in a cup and set aside.
  • Get all tomato sauce ingredients in a pot, take it to boil once it's boiling take it to low and cook for about 30 minutes (stir every 10 minutes).
  • Unless you buy them out of the shell, clean and boil mussels and clams (discard the ones that do not open) and remove them from shell.
  • Clean shrimp and devein.
  • Cut fish in strips.
  • Cut baby octopus in 3 strips.
  • Cut calamari in strips about 1/4-inch width.
  • Mix all seafood with marinade in a bowl and leave in fridge for about 1 hour.
  • In a Wok or a deep frying pan, add 1 Tsp oil and heat till starts smoking, add seafood and cook for about 8 minutes.
  • Mix seafood with tomato sauce and cook for 2 minutes stirring.
  • Mix all with your pasta.
  • Enjoy it with the left over wine.

The original recipe came from one of my favorite cookbooks, "Cook Healthy, Cook Quick". It called for lobster but I have substituted all types of seafood, (whatever I can find fresh!) and they all taste wonderful!! Serve with a salad and bread for a great light summer time meal!!

8 ounces fresh seafood (shrimp, scallops, lobster or crabmeat..even imitation crabmeat will work)
8 ounces angel hair pasta, uncooked
3/4 cup sliced fresh mushrooms
1/3 cup chopped green onion
1/3 cup dry white wine
1 clove garlic, minced
2 tablespoons reduced-calorie stick margarine
2 tablespoons flour
1 cup skim milk
1/3 cup nonfat sour cream
2 tablespoons grated parmesan cheese
1/2 teaspoon paprika

Steps:

  • Cook pasta according to package directions, omitting salt and fat.
  • Drain well.
  • Set aside and keep warm.
  • Combine mushrooms, green onions, white wine and garlic in a large nonstick skillet.
  • Bring to a boil.
  • Reduce heat, and simmer, uncovered until liquid evaporates.
  • Add margarine, stirring to melt.
  • Add flour and cook stirring constantly for 1 minute.

FOR THE ALFREDO SAUCE:
12 ounces shrimp, peeled and deveined
6 ounces lump crabmeat
1/2 lemon
2 T butter
1 shallot, chopped
1/4 C white wine
1/4 C Italian parsley, chopped
Olive oil
2 cloves garlic, minced
1 lb penne pasta (or your favorite shape)
1 1/2 C shredded Mozzarella cheese
2 C heavy cream
1 stick buter
2 cloves garlic, minced
5 ounces shredded Parmesan cheese

Steps:

  • Cook pasta according to directions. Meanwhile, melt the butter in a large skillet and drizzle in some olive oil. Cook the shallot until tender. Deglaze the pan with the wine and cook a couple of minutes to reduce. Add in the shrimp, crabmeat, parsley, and garlic and cook until the shrimp is pink and done, about 3-4 minutes. Season with a bit of salt and pepper. Squeeze the lemon over the seafood and remove from the heat. For the Alfredo sauce, melt the butter in a saucepot. Add in the cream and garlic and bring to a boil. Remove from the heat and whisk in the Parmesan cheese, a little at a time, until completely melted and the sauce is thickened. Preheat the broiler. Mix the seafood and the sauce with the pasta. Spread this into a casserole pan and sprinkle the Mozzarella all over the top. Broil for a couple of minutes to melt and brown the cheese.
