Time 1h

Yield 8

Number Of Ingredients 15

¼ cup white sesame seeds
¼ cup black sesame seeds
2 tablespoons shichimi togarashi (Japanese 7 spice)
4 pounds pork tenderloins
Kosher salt
2 tablespoons canola oil
3 shallots, minced
2 tablespoons minced fresh ginger
¾ cup dry white wine
2 tablespoons fresh lime juice
1 cup whipping cream
2 tablespoons soy sauce
3 tablespoons white miso paste
1 cup cold, unsalted butter, cut into 1-inch cubes
Kosher salt to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat the oil in a large skillet over medium-high heat until it begins to smoke. Meanwhile, mix the white and black sesame seeds together with the togarashi powder; set aside. Season the tenderloins with salt, then press into sesame mixture until completely coated. Sear the tenderloins on all sides until golden brown, about 1 minute per side.
  • Transfer the tenderloins to a baking sheet, and bake in preheated oven until the internal temperature reaches 145 degrees F (63 degrees C), 20 to 25 minutes. When done, remove pork, and allow to rest for five minutes in a warm place.
  • While pork is roasting, prepare sauce by simmering the shallots, ginger, lime juice, and wine in a small saucepan over medium-high heat until it has reduced to about 2 tablespoons of liquid. Add the cream, and continue to simmer until it has reduced by half. Pour mixture into a blender, along with soy sauce and miso. Blend on low speed for 10 seconds until pureed, then slowly add butter, a few cubes at a time with blender running until it is incorporated. Season to taste with salt, and keep in a warm place until ready to use.
  • To serve, slice the tenderloin into medallions, and pour warm sauce overtop; serve immediately.

Pan-Seared Pork Tenderloin with Rosemary Balsamic and Orange Sauce image

Provided by Kelsey Nixon

Categories     main-dish

Time 1h10m

Yield 6 servings

Number Of Ingredients 21

6 tablespoons olive oil
1 1/2 tablespoons freshly ground black pepper
1 tablespoon salt
2 teaspoons freshly grated orange zest
2 teaspoons minced fresh rosemary leaves
2 1/2 pounds pork tenderloins (about 2 large), trimmed
1 large shallot, minced
1/2 cup red wine
1/2 cup low-sodium chicken broth or stock
3 tablespoons cold unsalted butter, cut into small pieces
1 tablespoon balsamic vinegar
1 teaspoon minced fresh rosemary leaves
1 teaspoon freshly grated orange zest
Salt and freshly ground black pepper
2 to 3 tablespoons minced shallot or onion
1/2 cup wine
1/2 cup low-sodium broth or stock
3 tablespoons cold unsalted butter or heavy cream
Vinegar or lemon juice, to taste
Fresh herbs or other aromatics
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Mix 3 tablespoons olive oil, freshly ground black pepper, salt, orange zest, and minced rosemary in a small bowl. Rub the oil mixture all over the trimmed pork tenderloins and place them in a large baking dish. Cover and let the pork marinate 20 minutes.
  • Heat the remaining 3 tablespoons oil in a large skillet over medium-high heat. Add the pork and sear, cooking until browned on all sides. Remove the pork tenderloins from the skillet and place into an oven-safe dish; cover. Roast the pork until a meat thermometer inserted into the thickest part of the meat reads about 145 degrees F, about 15 minutes.
  • For the pan sauce: Pour off the majority of the cooking fat leaving any browned bits in the pan. Heat the pan over medium-high heat and add the shallot and the wine. Continue cooking until most of the wine has cooked off, scraping the browned bits off the bottom of the pan.
  • Add the broth and continue cooking until the sauce has reduced by half. Remove from the heat. Stir in the butter, one piece at a time, until fully incorporated.
  • Stir in the balsamic vinegar, rosemary, orange zest, salt, and pepper, to taste. Let the pork rest for 10 minutes before slicing. Drizzle the pork with the balsamic pan sauce.
  • After searing the pork tenderloins, pour off the majority of the cooking fat leaving any browned bits. Heat the pan over medium-high heat and add the shallots and wine. Continue cooking until most of the wine has cooked off, scraping the bits off the bottom of the pan.
  • Add the broth or stock and continue cooking until the sauce has reduced by half. Remove the pan from the heat. Stir in the butter, 1 tablespoon at a time, until fully incorporated.
  • Add the vinegar, fresh herbs, salt, and pepper, to taste. Spoon the sauce over the pork or meat and serve.

30 MINUTE ROASTED PORK TENDERLOIN RECIPE

30 Minute Roasted Pork Tenderloin Recipe image

For the best, juiciest pork tenderloin, sear the pork on all sides in a skillet before finishing in the oven. The spice blend you use is up to you; we love using a spicy steak spice blend or fresh herbs like rosemary and thyme. We love to serve this pork over polenta or mashed potatoes.

Time 30m

Yield Makes approximately 6 servings

Number Of Ingredients 6

2 (1 to 1 1/2-pound) pork tenderloins (also called pork fillet)
Salt and fresh ground black pepper
2 tablespoons canola or vegetable oil
1 to 2 tablespoons seasoning blend/rub of your choice, fresh or dried
3/4 cup wine, broth, apple cider or a combination
1 tablespoon unsalted butter

Steps:

  • Heat oven to 425 degrees F. Trim each tenderloin of any silver skin (this can be tough when cooked. Use a small sharp knife and slide the blade under and outward to remove it). Pat pork dry with paper towels. Then generously season with salt and pepper.
  • Heat a tablespoon of oil in a large cast-iron skillet or heavy-bottomed oven-safe frying pan over medium heat. Add the pork tenderloins and cook, occasionally turning, until browned all over, about 2 minutes per side. Scatter the seasoning blend or herbs over the pork.
  • Roast 10 to 15 minutes or until an internal thermometer inserted into the thickest part registers between 145 and 150 degrees F.
  • Transfer pork to a large plate and cover with aluminum foil. Let rest about 10 minutes. While pork is resting, place the skillet back over medium heat. Add the apple cider and simmer until reduced by half. Add butter then serve drizzled over pork.

Categories     Pork     Sauté     Quick & Easy     Dinner     Healthy

Yield 6 servings

Number Of Ingredients 8

2 pounds pork tenderloin, trimmed of fat and sinew
1/2 teaspoon salt (preferably kosher), plus additional to taste if desired
3/4 teaspoon freshly ground black pepper, plus additional to taste if desired
3 tablespoons olive oil
1 cup fresh strawberries, hulled and sliced
1/2 cup Prosecco
1 tablespoon unsalted butter
Optional Garnish: fresh herb sprigs, such as lemon thyme or lemon verbena

Steps:

  • Season pork tenderloins with salt and pepper. Heat olive oil in large nonstick skillet over medium-high heat. Add tenderloins and cook, turning, until browned on all sides, about 5 minutes. Reduce heat to medium, cover pan, and cook, turning occasionally, until pork registers 150 degrees F on instant-read thermometer, about 8 to 10 minutes, depending on thickness. Transfer tenderloins to a plate and let rest while preparing sauce. Add strawberries to pan and sauté until just softened, about 30 seconds. Stir in Prosecco, scraping pan to loosen browned bits. Add any meat juices that have accumulated on the plate of reserved tenderloins. Continue to simmer until the sauce is reduced by half, about 2 to 3 minutes. Drizzle sauce over the pork. Garnish with fresh herb sprigs, if desired.

SEARED PORK TENDERLOIN WITH A SMOKY MAPLE SAUCE

Seared Pork Tenderloin With a Smoky Maple Sauce image

I made this one year for a holiday dinner party. I had found two similar recipes in magazines that I combined to create this one. My only mistake was slightly over cooking the pork....nothing worse than overcooked and dry pork.

Provided by Melanie B.

Categories     Pork

Time 4h40m

Yield 8 serving(s)

Number Of Ingredients 12

1/2 teaspoon kosher salt
1/2 teaspoon dried thyme
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon black pepper
1/4 teaspoon ground cloves
2 lbs pork tenderloin
1 tablespoon olive oil
1 (6 ounce) can chipotle chilies, in adobo sauce
1/2 cup maple syrup, get the good stuff
1/4 cup chicken stock
1 tablespoon balsamic vinegar

Steps:

  • Mix together spices (first six ingredients) in a bowl. Sprinkle over pork, place in a resealable bag, and allow to refrigerate for 1-4 hours.
  • Bring oil to high heat in large saute pan (oven proof). Sear off each side of the pork tenderloin, quickly, but ensuring a nice brown crust. Place the pan, with both tenderloins in a 375 degree oven for 30 minutes, or until the internal temperature reaches 155 degrees. Remove pork from oven and pan, cover in foil, and allow to rest for 10-20 minutes. Do not discard the juices from the pan.
  • In the pan (that was just used for the pork), prepare the sauce by adding 2 teaspoons of the adobo sauce, syrup, stock, and vinegar and stirring at a medium heat. Use a whisk or spoon to scrape up any brown bits at the bottom of the pan. Stir constantly for about 5-6 minutes. Taste for seasoning and add salt/pepper if desired.
  • Serve pork in slices with a drizzle of sauce.
  • This dish goes VERY well with creamy roasted garlic mashed potatoes and fried apples.

HERB SEARED PORK TENDERLOIN

Herb Seared Pork Tenderloin image

This is from Bakespace.com, credited to Culinaryalchemist. It truly is my favorite way to prepare tenderloin; then plate the slices on a bed of mixed small leaf greens. Make sure and fix the garlic-infused olive oil at least the day before; prep time does not include this. It never seems to matter if the tenderloin is bigger or smaller. With the help of a meat thermometer to watch the internal temp, it comes out tender and just a bit pink everytime. Leftover oil is good to use for any other dish; just remove the garlic cloves and store as usual.

3 tablespoons fresh sage, finely chopped

Tips:

  • To ensure the pork tenderloin is cooked evenly, use a meat thermometer to check the internal temperature. It should reach 145°F (63°C) for medium-rare, 150°F (66°C) for medium, and 160°F (71°C) for well done.
  • If you don't have a meat thermometer, you can also check the doneness of the pork by cutting into it. The meat should be slightly pink in the center for medium-rare, and no longer pink for medium or well done.
  • Be careful not to overcook the pork, as it can become dry and tough.
  • If you are searing the pork tenderloin in a pan, make sure the pan is hot before adding the meat. This will help to create a nice sear on the outside of the pork.
  • If you are grilling the pork tenderloin, make sure the grill is preheated to medium-high heat. This will help to cook the pork evenly.
  • Let the pork tenderloin rest for a few minutes before slicing and serving. This will help the juices to redistribute throughout the meat.

Conclusion:

Seared pork tenderloin Rossini is a delicious and elegant dish that is perfect for a special occasion. The pork is cooked to perfection and the combination of flavors is simply stunning. If you are looking for a new and exciting way to prepare pork tenderloin, this recipe is definitely worth trying.
