ROASTED ROOT VEGETABLES

Roasted Root Vegetables image

Root vegetables (with the exception of potatoes and carrots) are some of the most overlooked and under appreciated food stuffs around. But these nutritional storehouses are hidden treasures worthy of your notice. Not only are they available in winter when other vegetables are hard to find, they are also very inexpensive. Experiment with turnips, rutabagas, beets and parsnips, and learn what they have to offer in taste and versatility. Rutabaga (also known as swede) is an accidental vegetable -- the result of a chance hybridization of turnips and cabbage. Like carrots, they're low in sodium and high in vitamin C. The flavor of all root vegetables will be enhanced by selecting fresh, firm produce (preferably organically grown) and storing it carefully. Turnips and potatoes should be stored in a cool, dark place out of the refrigerator. The rest of these roots will keep well in the refrigerator for at least a week. From Dr. Weil

HERB ROASTED VEGETABLES

Herb Roasted Vegetables image

I started with a recipe that I found on the McCormick spice website but I have changed it to incorporate vegetables and herbs that better suit my family's taste preferences. This is a very versatile recipe that lends itself well to changes. Use whatever vegetables and herb combinations that work best for you. Some of the other vegetables that I have enjoyed in this dish include yellow squash, corn on the cob (cut into 1-inch chunks) and other bell peppers (green, yellow, orange).

Tips:

  • Choose the right vegetables: Choose root vegetables that are firm and fresh. Good options include carrots, potatoes, turnips, parsnips, and beets.
  • Cut the vegetables evenly: Cut the vegetables into evenly sized pieces so that they cook evenly. If the pieces are too small, they will overcook and become mushy. If they are too large, they will take too long to cook and may not be tender in the center.
  • Toss the vegetables with oil and seasonings: Before roasting, toss the vegetables with olive oil, salt, pepper, and any other desired seasonings. This will help them to brown and caramelize.
  • Roast the vegetables at a high temperature: Roast the vegetables at a high temperature (425 degrees Fahrenheit or higher) so that they caramelize and brown. This will give them a delicious flavor and texture.
  • Don't overcrowd the pan: Do not overcrowd the pan when roasting the vegetables. This will prevent them from cooking evenly. If necessary, roast the vegetables in batches.
  • Roast the vegetables until they are tender: Roast the vegetables until they are tender when pierced with a fork. The cooking time will vary depending on the type of vegetables and the size of the pieces.

Conclusion:

Roasted root vegetables are a delicious and healthy side dish that can be enjoyed with a variety of meals. They are easy to make and can be tailored to your own taste preferences. With a little planning and preparation, you can enjoy a delicious and nutritious meal that the whole family will love.
