Number Of Ingredients 11

2 4-to-5-pound chickens, rinsed, patted dry and quartered
1 12-ounce bottle beer, preferably amber ale
1/2 cup sherry or apple cider vinegar
Extra-virgin olive oil, for brushing
5 cloves garlic
2 tablespoons chopped fresh oregano
2 tablespoons extra-virgin olive oil
1 serrano chile, seeded
1 teaspoon cumin seeds
1/2 teaspoon paprika
Kosher salt and freshly ground pepper

Increase the oven temperature to 450 degrees F and continue roasting until the chicken skin is golden brown and crisp and a thermometer inserted into the thickest part of the breast registers 165 degrees F, about 25 more minutes. 1/4 lb thinly sliced serrano ham
About 1 1/2 cups vegetable oil
1 (1/2-lb) wedge Manchego cheese*, chilled
4 teaspoons quince preserves or membrillo** (quince paste)

Steps:

  • Cut ham into 32 (3- by 2- by 2-inch) triangles. Heat 1/4 inch of oil in a 12-inch nonstick skillet over moderate heat until hot but not smoking, then fry ham in 4 batches, turning occasionally, until crisp and a shade darker, about 1 minute. Transfer to paper towels to drain.
  • Using a cheese plane or vegetable peeler, shave 32 small pieces of cheese from wedge. (Each piece should be about 1 inch square.) Top each ham chip with 1/8 teaspoon quince preserves, then press cheese squares into preserves.
  • *Available at specialty foods shops.
  • **Available at The Spanish Table (206-682-2827; spanishtable.com).

Tips:

  • Choose the right serrano peppers: Use fresh, firm serrano peppers that are deep green in color and have no blemishes. Avoid peppers that are soft or have brown spots.
  • Roast the peppers: Roasting the peppers brings out their flavor and makes them easier to blend. You can roast the peppers on a stovetop over high heat or in the oven at 400°F for 10-15 minutes, or until the skins are blistered and blackened.
  • Remove the stems and seeds: Once the peppers are roasted, remove the stems and seeds. You can do this by cutting the peppers in half lengthwise and scooping out the seeds with a spoon.
  • Blend the peppers: Add the roasted peppers to a food processor or blender and blend until smooth. You can add a little water or oil to help the blending process.
  • Season the paste: Once the paste is smooth, season it to taste with salt, pepper, and other spices. You can also add herbs, such as cilantro or parsley, for extra flavor.
  • Store the paste: Serrano paste can be stored in an airtight container in the refrigerator for up to 2 weeks. You can also freeze the paste for up to 6 months.

Conclusion:

Serrano paste is a versatile ingredient that can be used to add flavor to a variety of dishes. It is especially popular in Mexican and Latin American cuisine. If you are looking for a way to add a little extra heat and flavor to your next meal, try using serrano paste. You won't be disappointed!
