My Mom has cooked this recipe for as long as I remember. Now that I live on my own, I can't wait to go back home over the holidays to have this excellent dish. Mom would probably be upset that I gave it away, but it is so delicious that I think everyone should have a chance to experience it. Technically shish kabobs use lamb, so these should be called beef kabobs, but this is the family recipe and what we call it.

⅓ cup vegetable oil
½ cup soy sauce
¼ cup lemon juice
1 tablespoon prepared mustard
1 tablespoon Worcestershire sauce
1 clove garlic, minced
1 teaspoon coarsely cracked black pepper
1 ½ teaspoons salt
1 ½ pounds lean beef, cut into 1-inch cubes
16 mushroom caps
8 metal skewers, or as needed
2 green bell peppers, cut into chunks
1 red bell pepper, cut into chunks
1 large onion, cut into large squares

Steps:

  • Whisk the vegetable oil, soy sauce, lemon juice, mustard, Worcestershire sauce, garlic, black pepper, and salt together in a bowl; pour into a resealable plastic bag. Add the beef, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator 8 hours or overnight.

4 cups chopped Romaine lettuce
2 cups cooked shredded beef
1/2 cup shredded carrots
2 scallions, chopped
1/4 cup chopped fresh cilantro leaves
1/2 cup reduced-sodium chicken broth
1 tablespoon rice wine vinegar
2 teaspoons sesame oil

1 teaspoon black peppercorns
1 teaspoon coriander seeds
1/4 cup extra-virgin olive oil
12 scallions, thinly sliced crosswise
1 piece ginger (2 1/2 inches), minced (about 3 tablespoons)
Coarse salt and freshly ground pepper
1/4 teaspoon turmeric
2 pounds ground chuck
2/3 cup coarsely chopped fresh cilantro, plus sprigs for garnish
1 tablespoon chopped fresh mint
2 large lemons, each cut into 8 wedges

Steps:

  • Toast peppercorns and coriander in a small skillet over medium heat, swirling pan, until spices are fragrant, about 2 minutes. Transfer to a spice grinder, and process until finely ground.
  • Heat oil in a medium skillet over medium-high heat. Add scallions, ginger, and 2 teaspoons salt. Cook, stirring occasionally, until scallions are tender, about 3 minutes. Stir in ground spices, and cook for 30 seconds. Stir in turmeric. Transfer scallion mixture to a large bowl, and let cool, about 20 minutes.
  • Add beef, cilantro, and mint to scallion mixture, and gently mix. Refrigerate for 30 minutes.
  • Divide meat mixture into 16 pieces, then form each piece into a log, 1 1/2 inches thick. Slide a skewer lengthwise through center of each log. Place a lemon wedge on end of each skewer. Place skewers on a baking sheet, and refrigerate for 30 minutes.
  • Preheat grill to medium-high. Season kebabs with salt and pepper. Arrange on grill, and cook, undisturbed, for 3 minutes. Carefully turn skewers a third of the way, and cook for 2 minutes. Turn skewers a third of the way again, and cook for 2 minutes. Transfer skewers to a plate, garnish with cilantro, and serve immediately.
