SHRIMP WITH SPICY GREEN RICE
Taking a cue from the Venetian risi e bisi, a soupy rice-and-peas, this version with shrimp highlights sweet, crunchy sugar snap peas with Southeast Asian ingredients: the heat of chiles and ginger, the freshness of basil and cilantro, and the salty depth of fish sauce.

SESAME GINGER SHRIMP AND VEGETABLE PACKETS
Here's a recipe I modified from one of those Reynolds foil ads. It's quick and healthy. Whatever you do (unless you know you don't like it!), don't leave out the fresh ginger. To me, it makes the recipe! Add brown or white rice, soy sauce for a condiment, and you have a meal!

CRISPY WONTON CHICKEN SALAD
This dynamic chicken salad, starring crispy strips of fried wonton wrappers, draws inspiration from the wonton chicken salad at the soup and salad buffet chain Sweet Tomatoes, as well as the American Chinese chicken salads that pervaded chain-restaurant menus throughout the 1990s and early 2000s. In a supporting role, letting the crispy wontons shine, is the punchy dressing of peach preserves, rice vinegar, sesame oil and chili powder. The dressing's low oil content - plus the addition of mayonnaise, which helps create an emulsion - means the salad greens stay crunchy and keep for longer. For the chicken, you can use any leftover meat or tear pieces from a store-bought rotisserie bird.

Steps:
- Make the dressing: In a large bowl, whisk together the vinegar, sesame oil, peach preserves, mayonnaise, soy sauce, chili powder and onion powder, and season to taste with salt.
- Prepare the salad: Add the chicken to the dressing and toss.
- To fry the wonton wrappers, cut the squares into 1/2-inch strips, then cut those strips in half crosswise to shorten them. In a medium saucepan, heat an inch of oil over medium to 350 degrees, or until a wonton strip immediately bubbles when added. Carefully add the wonton strips to the hot oil and, stirring constantly with a slotted spoon, fry until puffy and golden, 30 seconds to 2 minutes. Transfer the crispy wontons to a paper towel-lined plate and season with salt.
- Assemble the salad: Add the chopped romaine, scallions, cilantro, mint and half of the fried wontons to the bowl with the dressed chicken, and toss to combine. Season with salt as needed. Top with the remaining fried wontons and serve immediately.
Tips:
- Use large shrimp: Jumbo or extra-large shrimp will work best for this recipe. They'll hold up well to the cooking process and won't overcook easily.
- Don't overcrowd the pan: When cooking the shrimp, make sure not to overcrowd the pan. This will help them cook evenly and prevent them from steaming instead of searing.
- Cook the shrimp until they're opaque: The shrimp are done cooking when they're opaque and pink on the outside and white on the inside. Don't overcook them, or they'll become tough and rubbery.
- Use a variety of greens: This recipe calls for a mix of baby bok choy and spinach, but you can use any type of greens you like. Some other good options include kale, Swiss chard, and mustard greens.
- Make sure the sauce is thickened: The sauce for this dish should be slightly thickened. If it's too thin, it won't coat the shrimp and greens properly. To thicken the sauce, you can add a cornstarch slurry or some arrowroot powder.
Conclusion:
This sesame shrimp and greens with rice is a quick and easy weeknight meal that's packed with flavor. The shrimp are tender and juicy, the greens are crisp and tender, and the sauce is savory and slightly sweet. It's a great way to get a healthy and delicious meal on the table in under 30 minutes.
