1 whole boneless chicken breast, halved
2 teaspoons sesame seeds
1 tablespoon vegetable oil plus additional for brushing the grill pan
1/4 pound fresh shiitake or white mushrooms, stems discarded and the caps sliced thin
1/2 pound cabbage, sliced thin (about 2 cups)
1 small red bell pepper, cut into julienne strips
2 teaspoons white-wine vinegar
2 teaspoons soy sauce
1 teaspoon Oriental sesame oil
1/2 teaspoon minced peeled fresh gingerroot
1/4 teaspoon sugar

Steps:

  • Coat the chicken with the sesame seeds and season it with salt and black pepper. Heat a ridged grill pan or heavy skillet over moderately high heat until it is hot, brush it with the additional vegetable oil, and in it sauté the chicken for 7 to 9 minutes on each side, or until it is just springy to the touch.
  • While the chicken is cooking, in a large skillet heat the remaining 1 tablespoon vegetable oil over moderately high heat until it is hot but not smoking and in it stir-fry the mushrooms for 3 minutes. Add the cabbage and the bell pepper and stir-fry the vegetables for 5 minutes, or until they are crisp-tender. In a small bowl combine well the vinegar, the soy sauce, the sesame oil, the gingerroot, and the sugar, add the mixture to the vegetables with salt and black pepper to taste, and stir-fry the mixture over moderately high heat for 1 minute. Divide the vegetable mixture between 2 heated plates, cut the chicken against the grain into 1/4-inch-thick slices, and arrange it on top of the vegetables.

Simply delicious. Even my picky kids approved! I used black sesame seeds and it works out well. I think the white sesame seeds would offer a better color contrast in the dish. Frankly, I don't think the water chestnuts would be missed. Take care not to over cook, the veggies will be mushy and the chicken tough. 1 tablespoon vegetable oil, sub. peanut oil, more as needed
3 tablespoons sesame seeds
1 tablespoon ginger, peeled, chopped
1 lb chicken breast, cut into bite-sized pieces
1/2 cup yellow onion, chopped 1-inch pieces
1/2 cup red bell pepper, 1-inch pieces
1/2 tablespoon salt
4 ounces water chestnuts, course shop, approx. 1/2 can
1/3 cup hoisin sauce
1 tablespoon soy sauce
2 teaspoons rice wine vinegar
1 teaspoon Worcestershire sauce
1 cup long grain white rice, cooked
1/4 cup green onion, sliced, with tender green stems for garnish

Steps:

  • In a wok or large skillet over medium-high heat, warm the oil.
  • Add the sesame seeds and ginger to the oil and saute until fragrant and seeds golden, about 2 minutes *CAREFUL have a lid ready, it pops!
  • Add the onions, bell pepper and salt. Saute for 1 minute.
  • Add the chicken, more oil if necessary and continue to saute until chicken is cooked through and no longer pink.
  • Add water chestnuts, hoisin sauce, soy sauce, Worcestershire sauce, vinegar. cook until flavors are well blended, about 2-3 minutes.
  • Serve over rice and top with green onions.

1 pound boneless skinless chicken breasts, cut into 1-inch-wide strips
4 teaspoons soy sauce
1/2 cup dry Sherry
2 teaspoons cornstarch
2 tablespoons peanut oil
6 ounces snow peas
4 garlic cloves, minced
1 teaspoon chili paste with garlic
1 8-ounce can sliced bamboo shoots, drained
1 8-ounce can water chestnuts, drained
1/4 cup canned chicken broth
2 tablespoons sesame seeds, toasted
3 green onions, sliced
1 teaspoon oriental sesame oil
Steamed rice
Additional soy sauce

  • Place first 4 ingredients in bowl and stir. Let marinate 15 minutes.
  • Heat oil in wok or heavy large skillet over medium-high heat. Add snow peas, garlic and chili paste and stir-fry 30 seconds. Add chicken with marinade and stir-fry 3 minutes. Add bamboo shoots and water chestnuts and stir-fry until chicken is almost cooked through, about 2 minutes. Mix in broth. Add sesame seeds and green onions; stir-fry 30 seconds. Add sesame oil and toss to coat. Serve with rice, passing soy sauce separately.
