SESAME VEGETABLE SALAD

Sesame Vegetable Salad image

From Woman's Day-Oct. 1996 Note: August 17th, 2011 -- Update: This makes a large salad. I made it in my 4 quart pyrex glass bowl. The dressing makes a 1 1/4 cups, it is tangy from the rice vinegar and has a mustardy, sesame flavor. I made the dressing 3 hours before serving and put in the refrigerator to chill. Added dressing to salad just before serving. My family really enjoyed this and loved the flavors.

8 scallions, sliced

  • Add dressing to vegetables, mix and sprinkle sesame seeds on top.

Tips:

  • Choose fresh, crisp vegetables: The fresher the vegetables, the more flavorful the salad will be. Look for vegetables that are brightly colored and free of blemishes.
  • Use a variety of vegetables: This will give the salad more flavor and texture. Some good options include carrots, celery, cucumber, radish, snap peas, and bell peppers.
  • Cut the vegetables into uniform pieces: This will help them cook evenly. You can use a knife or a food processor to cut the vegetables.
  • Marinate the vegetables: Marinating the vegetables in a mixture of oil, vinegar, and seasonings will help to flavor them and make them more tender.
  • Cook the vegetables properly: Don't overcook the vegetables, or they will become mushy. Stir-frying, steaming, or roasting are all good methods for cooking vegetables for a salad.
  • Use a light dressing: A heavy dressing will overpower the flavor of the vegetables. A simple vinaigrette or lemon-tahini dressing is a good option.
