Time 1h

Number Of Ingredients 14

4 flour tortillas (10-inch)
1 tablespoon olive oil, plus more for pan
1 medium onion, chopped
1 1/2 teaspoons ground cumin
1/4 teaspoon red-pepper flakes
Coarse salt and ground pepper
2 tablespoons tomato paste
1 pound ground beef sirloin
3 garlic cloves, minced
1 package (10 ounces) frozen corn kernels

Fresh cilantro sprigs, for garnish (optional)
Sour cream (optional)

Steps:

  • Preheat oven to 400 degrees. Using a paring knife, trim tortillas to fit a 9-inch springform pan (use the removable bottom of the pan as a guide). Assemble pan with the bottom upside down; lightly oil bottom and sides. Set aside.

Yield Makes 4 main-course servings

Number Of Ingredients 11

1 (15-oz) can black beans, drained and rinsed
1 (10-oz) package frozen corn kernels, thawed
1 cup mild tomato salsa
1 (8-oz) can tomato sauce
6 oz pepper Jack cheese, coarsely grated (2 cups)
1/2 cup chopped fresh cilantro
2 scallions, thinly sliced
1/2 teaspoon ground cumin
4 (10-inch) flour tortillas (burrito-size)
1 tablespoon olive oil
Accompaniment: sour cream

Steps:

  • Put oven rack in lower third of oven and preheat oven to 450°F.
  • Stir together beans, corn, salsa, tomato sauce, cheese, cilantro, scallions, and cumin in a large bowl.
  • Heat a 12-inch heavy skillet over high heat until smoking. Brush both sides of each tortilla with oil and fry, turning over once, until puffed and golden in spots, about 1 minute.
  • Put 1 tortilla in a well-oiled 15- by 10-inch shallow baking pan, then spread with 1 1/3 cups of filling. Repeat layering twice, then top with remaining tortilla, gently pressing to help layers adhere.
  • Bake until filling is heated through, about 12 minutes. Transfer with a large metal spatula to a platter, then cut pie into wedges with a serrated knife.

Tips:

  • Use a large skillet to cook the ground beef. This will help it brown evenly and prevent it from becoming dry.
  • Season the ground beef with your favorite taco seasoning. You can also add other spices, such as chili powder, cumin, or paprika, to taste.
  • Use high-quality tortillas for the pie. This will help the pie hold together better and prevent it from becoming soggy.
  • Layer the ingredients in the pie in the order that they are listed in the recipe. This will help ensure that the pie is cooked evenly.
  • Bake the pie at a high temperature for a short period of time. This will help the cheese melt and the pie become bubbly.
  • Let the pie cool for a few minutes before serving. This will help the pie set and make it easier to slice.

Conclusion:

Seven-layer tortilla pie is a delicious and easy-to-make dish that is perfect for parties or potlucks. It is also a great way to use up leftover ingredients. With its combination of ground beef, cheese, beans, and salsa, this pie is sure to be a hit with everyone.
