Time 20m

Yield 4 cups

Number Of Ingredients 12

4 cups dry breadcrumbs
1/3 cup vegetable oil
1 tablespoon salt
1 tablespoon paprika
1 tablespoon celery salt
1 teaspoon ground black pepper
1/2 teaspoon garlic salt
1/2 teaspoon minced garlic
1/4 teaspoon minced onion
1 pinch dried basil leaves
1 pinch dried parsley
1 pinch dried oregano

Steps:

  • Combine all ingredients in a large re-sealable plastic bag.
  • Seal bag & shake all ingredients together.
  • Store in a tightly sealed container in the refrigerator.
  • You will need about one cup of coating mix for 3 pounds of chicken, or 6-8 pieces.

Tips:

  • Choose firm vegetables. Softer vegetables, like tomatoes or zucchini, will not hold up well to the high heat of the oven.
  • Cut the vegetables into uniform pieces. This will help them cook evenly.
  • Use a large baking sheet. This will give the vegetables plenty of space to spread out and cook evenly.
  • Don't overcrowd the baking sheet. If the vegetables are too crowded, they will not cook evenly.
  • Toss the vegetables with the olive oil, seasonings, and Shake 'N Bake coating. This will help the vegetables to brown and crisp.
  • Bake the vegetables at a high temperature. This will help them to cook quickly and evenly.
  • Keep an eye on the vegetables while they are baking. You may need to adjust the cooking time depending on the type of vegetables you are using.
