SHAKER SUGAR CREAM PIE

This pie is served at Shaker Village here in Kentucky as part of the dinner fare at the Trustee House. It is rich and creamy and delicious and if a whole pie is in the house with me around, it is in serious danger of turning up "missing".

Time 50m

Yield 8 serving(s)

Number Of Ingredients 7

1 1/4 cups flour
1 cup brown sugar
2 cups half-and-half
1/2 teaspoon vanilla
1/4 cup butter, cut into very small pieces
1 pinch nutmeg
9 inches unbaked pie shells

Steps:

  • Preheat the oven to 350 degrees.
  • Mix the flour and sugar and place in the bottom of the pie shell. Add the cream, vanilla, and the dots of butter. Sprinkle the top of the cream with nutmeg.
  • Bake for 40-45 minutes or firm. Cool completely and refrigerate before serving. Store in the refrigerator.

Tips:

- For the creamiest filling, use full-fat cream and milk. Avoid using low-fat or skim milk, as they will make the filling less rich and creamy. - If you don't have a maple flavoring extract, you can use a combination of vanilla and almond extract. Simply use 1/2 teaspoon of each extract. - If you want a crispy crust, be sure to preheat your oven to the correct temperature before baking the pie. - To prevent the crust from becoming soggy, brush the bottom of the pie crust with a little bit of egg white before filling it. - If you don't have a pie plate, you can use a 9-inch springform pan. Just be sure to grease the pan well before filling it with the pie dough. - To make sure the pie is cooked through, insert a toothpick into the center of the filling. If the toothpick comes out clean, the pie is done. - Let the pie cool completely before serving. This will allow the filling to set and firm up. - Serve the pie with a dollop of whipped cream or ice cream.
