3 tablespoons butter
1 shallot, finely chopped
1 clove garlic, chopped
2 tablespoons all-purpose flour
1 cup heavy whipping cream
1 (10-ounce) box frozen chopped spinach, thawed, drained and squeezed dry
1 (8-ounce) jar artichoke hearts, drained and chopped
1 (10-ounce) can diced tomatoes with green chiles (recommended: Rotel)
1 cup shredded 4 cheese blend
Tortilla chips and cut vegetables, for serving

Steps:

  • Melt butter in a medium saucepan over medium heat. Once it foams, add the shallot and garlic, and saute until softened, about 3 minutes.
  • Add the flour and cook while stirring until it becomes a light blonde color.
  • Slowly stir in the heavy cream, and the drained spinach, and simmer until it starts to thicken, about 5 minutes.
  • Stir in the artichoke hearts, tomatoes, and cheese and cook until the cheese is melted. Remove to a serving bowl and serve with tortilla chips.

This is supposedly a best selling recipe on the menu at River City Cafe in Colorado. I have not tried this yet, but since any spinach dip calling for fresh spinach appeals to me, I wanted to share it. This is very different from the usual spinach dips. I have never seen another version quite like this one. I am guessing at the cook time, which I will update once I try this. This makes enough dip for your whole herd! ;). To me, this is perfect football party food!

1 (8 ounce) can water-packed artichoke hearts, drained and quartered
6 ounces asiago cheese or 6 ounces parmesan cheese, finely grated
3 ounces fresh spinach, washed and patted dry

I don't even remember how long I've been making this dip. I believe the recipe was given to me sometime in the 70's but by who I just can't remember. Nonetheless it is a great dip and easy to make.

1 box(es) frozen chopped spinach
1/2 cup(s) sour cream
1/2 cup(s) mayonaise
3-4 - green onions sliced thin, use some of the green stem as well as the white end
1 can(s) sliced waterchestnuts, drained
1 box(es) knorr leek soup
1 - large round loaf of bread.

Steps:

  • Cook spinach according to package directions
  • Mix onions,water chestnuts, soup mix, mayonaise, sour cream,stir well.
  • Stir well and add spinach
  • hollow out a loaf of round bread and cut the inside pieces into smaller pieces. Put the dip inside the bread bowl with the pieces surrounding it for dipping into the bowl. Refridgerate till serving time. You can make this a day ahead and store in a container and fill just before serving.
