6 tablespoons butter, softened, divided
8 slices sourdough bread
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
4 ounces Brie cheese, rind removed, sliced

Steps:

  • Spread 3 tablespoons butter on one side of each slice of bread. Place bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with sliced brie and tomatoes. Sprinkle a portion of the cheddar cheese mixture evenly over brie; add fried onion rings. Sprinkle with the remaining cheddar cheese mixture and add bacon; top with remaining bread slices, toasted side facing inwards. Spread the butter-mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.

If desired, replace 2 tablespoons of the bread crumbs with 2 tablespoons of crumbled parmesan or asiago cheese. If you'd rather not use alcohol, replace it with a tablespoon or so of lemon juice.

2 (13 3/4 ounce) cans artichoke hearts (whole)
1/3 cup dry breadcrumbs
kosher salt and pepper, to taste
2 teaspoons olive oil
3 medium shallots, sliced thin
1 garlic clove, minced
2 tablespoons pine nuts
1/4 cup sun-dried tomato, cut into small strips
1 tablespoon fresh thyme or 3/4 teaspoon dried thyme
1 tablespoon fresh basil or 3/4 teaspoon dried basil
3 tablespoons white wine
1/2 cup smoked gouda cheese, shredded

Steps:

  • Preheat oven to 375°F.
  • If the pine nuts are not already toasted, place on a shallow pan and toast for about 5 minutes (being very careful not to let them burn).
  • Drain artichoke hearts in a colander and pat dry.
  • Spray a 9" square shallow pan with cooking spray. Roll artichokes in breadcrumbs seasoned with salt and pepper. Place artichokes in the pan in a single layer. Sprinkle any remaining breadcrumbs evenly over the artichokes, if desired. Cook uncovered for 45 minutes.

  • Continue baking, uncovered, about 15 minutes or until cheese has melted and mixture is slightly bubbly. Serve immediately.
