SHEILA'S CAN'T-FAIL FUDGE

Sheila's Can't-Fail Fudge image

This is the ONLY fudge recipe that I make, which everyone looks forward to around the holidays. My niece Alisa saves her empty container from the year before and brings it to me for her annual refill. She loves to help make this, and it is so easy, even a child can do it! I personally prefer walnuts in my fudge, but it's great either way. It makes a nice gift when presented in a holiday tin. Note: Make only one recipe at a time - do not double!

Time 1h

Yield 8 inch square pan

Number Of Ingredients 7

2/3 cup evaporated milk
1 2/3 cups sugar
1/2 teaspoon salt
1 1/2 cups semi-sweet chocolate chips
1 1/2 cups miniature marshmallows
1 teaspoon vanilla
1/2 cup chopped walnuts (optional)

Steps:

  • Combine evaporated milk, sugar, and salt. Boil for 5 minutes, stirring constantly. Remove from heat.
  • Add chocolate chips and marshmallows, and stir until melted. Then stir in the vanilla (and add nuts, if using).
  • Spoon fudge into a greased 8x8x2-inch square pan. Smooth out with spatula. Refrigerate until cool, then cut into squares.

Tips:

  • Use a candy thermometer to ensure the fudge reaches the correct temperature. This will help prevent the fudge from being too soft or too hard.
  • If you don't have a candy thermometer, you can use the cold water test. To do this, drop a small amount of the fudge into a bowl of cold water. If the fudge forms a soft ball, it is ready. If it forms a hard ball, it is overcooked.
  • Stir the fudge constantly to prevent it from burning. However, be careful not to over-stir, as this can cause the fudge to become grainy.
  • Add the flavorings of your choice after the fudge has been removed from the heat. This will help prevent the flavors from evaporating.
  • Pour the fudge into a greased pan and let it cool completely before cutting it into pieces.

Conclusion:

With a little practice, you'll be able to make perfect fudge every time. Just remember to follow the tips above and be patient. Fudge is a delicious and versatile treat that can be enjoyed by people of all ages. It's perfect for parties, potlucks, and holiday gatherings. So next time you're looking for a sweet treat, give fudge a try. You won't be disappointed!
