SUNNY'S COPYCAT SWEET AND SOUR BRUSSELS SPROUTS

Sunny's Copycat Sweet and Sour Brussels Sprouts image

This is my favorite copycat Brussels sprouts recipe, inspired by Chef Andrew Whitney at Dell 'Anima in New York City.

Provided by Sunny Anderson

Categories     side-dish

Time 1h20m

Yield 4 servings

Number Of Ingredients 11

1/2 cup balsamic vinegar
1/3 cup honey
1 tablespoon chopped fresh rosemary
1/4 teaspoon hickory-scented liquid smoke
Kosher salt and freshly ground black pepper
Vegetable oil, to coat the pan
2 pounds Brussels sprouts, some halved, some quartered and falling leaves retained
Kosher salt
1 medium red onion, roughly chopped
1/4 cup pepitas, toasted in a dry pan
1/4 cup dried cherries or cranberries

Steps:

  • Make the sauce. In a saucepan with straight sides on medium heat, add the balsamic vinegar, honey, rosemary, liquid smoke, a pinch of salt and a hefty grind of black pepper. Stir and cook on medium-low until it reduces and thickens into a sauce, about 20 minutes.
  • Saute the veggies. In your largest pan on medium-high heat, add the oil and the Brussels, minus the reserved stray leaves. Cook the Brussels until they are a deep golden to dark caramelized color on most of the surface, 15 to 20 minutes. Season with salt and add the onions to the pan. Toss to cook, wilt and caramelize, keeping the pan hot, until the onions are lightly browned, 10 to 15 minutes. Add the reserved leaves and cook, tossing, until they become golden as well.
  • Finish and serve. Add the pepitas and dried cherries to the pan and toss everything to combine and warm. Add the sauce and toss again. Season the pan with salt and serve.

SHEILA'S PERFECT SANGRIA

Sheila's Perfect Sangria image

I've been looking for a good sangria recipe for some time. I checked out several recipes, combined the best of everything and came up with the perfect mix that would easily rival my favorite local lounge's sangria! Measurements are approximate and to taste but don't scrimp on any of the flavors. Add more juice or rum until it knocks your socks off....then it's your perfect sangria.

Time 4h30m

Yield 12

Number Of Ingredients 17

2 navel oranges, thinly sliced
2 lemons, thinly sliced
2 limes, thinly sliced
1 pear, cored and chopped
1 kiwi, peeled and sliced
1 cup fresh strawberries, sliced
1 (20 ounce) can pineapple chunks in juice
½ cup white sugar
½ cup Cointreau or other orange liqueur
1 cup white rum
⅓ cup coconut-flavored rum
2 cups orange juice
2 (750 milliliter) bottles dry red wine, chilled

¼ cup lemon juice
2 tablespoons lime juice
1 cup lemon-lime soda, chilled

Steps:

  • Place the oranges, lemons, limes, pear, kiwi, strawberries, pineapple chunks and juice, and white sugar into a large bowl. Pour the Cointreau, white rum, coconut-flavored rum, and orange juice over the fruit. Stir gently to dissolve the sugar. Cover and refrigerate for 2 hours.
  • Add the red wine, pink lemonade concentrate, lemon juice, and lime juice. Cover and refrigerate for 2 hours, or overnight.

Tips:

  • Choose fresh Brussels sprouts: Look for firm, compact sprouts with bright green leaves. Avoid any with yellow or wilted leaves.
  • Trim the Brussels sprouts: Cut off the stem end and any discolored leaves.
  • Par-boil the Brussels sprouts: This will help them cook evenly and prevent them from getting mushy. Bring a large pot of salted water to a boil, add the Brussels sprouts, and cook for 5-7 minutes, or until they are tender-crisp. Drain the sprouts and set aside.
  • Cook the Brussels sprouts in a hot skillet: This will help them caramelize and develop a nice browned crust.
  • Add some flavorings to the Brussels sprouts: This could include bacon, garlic, shallots, herbs, or spices. Get creative and experiment with different flavor combinations.
  • Serve the Brussels sprouts immediately: They are best enjoyed hot and fresh.

Conclusion:

Brussels sprouts are a delicious and versatile vegetable that can be enjoyed in many different ways. Whether you roast them, sauté them, or grill them, they are sure to be a hit with your family and friends. So next time you're looking for a healthy and flavorful side dish, give Brussels sprouts a try. You won't be disappointed!
