500 g lean minced lamb
2 sprigs of fresh rosemary
1 x 400 g tin of cannellini beans
2 onions
2 carrots
2 sticks of celery
250 g chestnut mushrooms
1 heaped tablespoon plain flour
800 ml organic chicken or veg stock
800 g swede
800 g potatoes
2 tablespoons semi-skimmed milk
15 g mature Cheddar cheese
1 tablespoon Worcestershire sauce
1 teaspoon mint sauce
350 g frozen peas

Steps:

  • Put the mince into a cold casserole pan. Place on a high heat, add a really good pinch of black pepper and cook for 15 minutes, or until dark golden, breaking it up with a wooden spoon.
  • Pick and finely chop the rosemary leaves, drain the beans, then stir both into the pan. Cook and stir for 8 minutes, or until the beans start to pop and it's all getting dark and gnarly.
  • Peel the onions and carrots, trim the celery, wipe the mushrooms clean, then finely chop it all (or blitz in a food processor). Stir into the pan and sweat for 10 minutes on medium-high, stirring occasionally.
  • Stir in the flour, followed by the stock. Bring to the boil, then simmer on a low heat with the lid on for 30 minutes.
  • Meanwhile, preheat the oven to 180ºC/350ºF/gas 4.
  • Wash the swede and potatoes (leaving the skins on for extra nutritional benefit) and cut into 3cm chunks.
  • Cook just the swede in a large pan of boiling salted water for 10 minutes, add the potatoes for 10 more minutes, or until cooked through, drain well, mash with the milk and grated cheese, and season to perfection.
  • Check the consistency of the mince - you want it slightly wetter than you think, as it will thicken further in the oven. Add the Worcestershire and mint sauces, taste, and season to perfection.
  • Sprinkle the peas over the mince, letting them sit on the surface to help prevent the mash from sinking in too much. Put spoons of mash randomly on top, using a fork to scuff it up and make valleys and mountains, increasing the surface area, and the crispy bits.
  • Bake for 50 minutes, or until golden and bubbling. Nice with seasonal greens.

2 teaspoons dried parsley leaves
1 teaspoon dried rosemary leaves

1/2 teaspoon ground black pepper
1 tablespoon Worcestershire sauce
2 garlic cloves (-minced)
2 tablespoons all purpose flour
2 tablespoons tomato paste
1 cup beef broth
1 cup frozen mixed peas & carrots*
1/2 cup frozen corn kernels
1 1/2 - 2 lb. russet potatoes (-about 2 large potatoes peeled and cut into 1 inch cubes)
8 tablespoons unsalted butter (-1 stick)
1/3 cup half & half
1/2 teaspoon garlic powder

2 ounces unsalted butter

1 egg yolk
2 tablespoons canola oil
1 cup chopped onion
2 carrots, peeled and diced small
2 cloves garlic, minced
1 1/2 pounds ground lamb
1 teaspoon kosher salt

Add the lamb, salt and pepper and cook until browned and cooked through, approximately 3 minutes. Sprinkle the meat with the flour and toss to coat, continuing to cook for another minute. Add the tomato paste, chicken broth, Worcestershire, rosemary, thyme, and stir to combine. Bring to a boil, reduce the heat to low, cover and simmer slowly 10 to 12 minutes or until the sauce is thickened slightly.
  • Add the corn and peas to the lamb mixture and spread evenly into an 11 by 7-inch glass baking dish. Top with the mashed potatoes, starting around the edges to create a seal to prevent the mixture from bubbling up and smooth with a rubber spatula. Place on a parchment lined half sheet pan on the middle rack of the oven and bake for 25 minutes or just until the potatoes begin to brown. 1/2 cup milk
1/4 cup butter
salt and pepper (to taste)
2 tablespoons avocado oil or olive oil
1 large onion (diced)
3 garlic cloves (minced)
2 large carrots (peeled and diced)
2 celery stalk (diced)
1 1/2 pounds ground lamb or ground beef
1 teaspoon salt
1/4 teaspoon pepper
1 cup chicken broth (or if using ground beef use beef broth)
1 1/2 tablespoons tomato paste
1 tablespoon Worcestershire sauce (see notes above)
2 teaspoons fresh rosemary (finely chopped)
1 teaspoon fresh thyme (finely chopped)
1 cup frozen peas

Steps:

  • Place the potatoes in a pot on the stove and cover with cold water. Turn the heat to high and bring to a boil. Cook for 13-15 minutes, or until the potatoes are soft when pierced with a fork.
  • Drain the potatoes in a colander, then return to the pot. Add the milk, butter, salt and pepper and mash until creamy.
  • Preheat your oven to 400 degrees fahrenheit (200 celsius).
  • In a large oven-safe saute pan, heat the oil on medium heat. Add the onion and garlic and saute for a minute. Then add the diced carrots, diced celery, and lamb. Cook for 8-10 minutes or until the meat is browned. Use your spatula to break up the meat while cooking.
  • Drain the fat from the pan and add the broth, tomato paste, Worcestershire sauce, rosemary, thyme, salt and pepper. Simmer for about 5 minutes, until the sauce is slightly thickened.
  • Add the frozen peas and stir together. Turn off the stove and use the back of your spatula to flatten the meat mixture into a single layer.
  • Dollop the mashed potatoes on top of the meat and use a spoon or spatula to spread it flat to the edges. If desired, create texture in the potato topping with a spoon or fork.

1 tbsp sunflower oil
1 large onion, chopped
2-3 medium carrots, chopped
500g pack lamb mince
2 tbsp tomato purée
large splash Worcestershire sauce
500ml beef stock
900g potatoes, cut into chunks
85g butter
3 tbsp milk

Steps:

  • Heat 1 tbsp sunflower oil in a medium saucepan, then soften 1 chopped onion and 2-3 chopped carrots for a few mins.
  • When soft, turn up the heat, crumble in 500g lamb mince and brown, tipping off any excess fat.
  • Add 2 tbsp tomato purée and a large splash of Worcestershire sauce, then fry for a few mins.
  • Pour over 500ml beef stock, bring to a simmer, then cover and cook for 40 mins, uncovering halfway.
  • Meanwhile, heat the oven to 180C/fan 160C/gas 4, then make the mash. Boil the 900g potato, cut into chunks, in salted water for 10-15 mins until tender. Drain, then mash with 85g butter and 3 tbsp milk.
  • Put the mince into an ovenproof dish, top with the mash and ruffle with a fork. The pie can now be chilled and frozen for up to a month.
  • Bake for 20-25 mins until the top is starting to colour and the mince is bubbling through at the edges. (To bake from frozen, cook at 160C/fan 140C/gas 3 for 1 hr-1 hr 20 mins until piping hot in the centre. Flash under the grill to brown, if you like.)
  • Leave to stand for 5 mins before serving.

1 onion (diced)
1.5-2 lbs lean ground beef (or turkey)
3 cups frozen mixed vegetables (peas, carrots, corn, and/or green beans)
kosher salt and black pepper (to taste)

Steps:

  • Cover potatoes with cold water and 1 tablespoon of kosher salt in a large pot, and bring to a boil. Cook until potatoes are fork-tender, about 15-20 minutes.

1 (12oz) bag frozen mixed veggies
1 (10.75oz) can tomato soup
1 (1.5oz) packet of beef stew seasoning mix
1/2 cup water
1-2 cups shredded cheddar cheese

  • Preheat your oven to 400 degrees.
  • Prepare the mashed potatoes according to the package directions (about half of a 13 ounce box; more if you like a lot of potatoes or are feeding a large family).

1 Tablespoon tomato paste

2 cups frozen mixed vegetables (carrots, peas and corn)
salt and pepper (to taste)
13.75 ounces instant mashed potatoes
1 cup shredded sharp cheddar cheese

Steps:

1 large egg yolk

1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 3/4 pounds ground beef or ground lamb
1 carrot, peeled and chopped
1 onion, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup beef stock or broth
2 teaspoons Worcestershire, eyeball it
1/2 cup frozen peas, a couple of handfuls
1 teaspoon sweet paprika
2 tablespoons chopped fresh parsley leaves

  • Preheat broiler to high. Fill a small flameproof rectangular casserole with meat and vegetable mixture. Spoon potatoes over meat evenly. Top potatoes with paprika and broil 6 to 8 inches from the heat until potatoes are evenly browned. Top casserole dish with chopped parsley and serve.
