Time 20m

Yield 6 to 8 servings

Number Of Ingredients 11

1/4 cup freshly squeezed lemon juice
1/4 cup freshly squeezed orange juice
2 tablespoons minced shallots
1 tablespoon Dijon mustard
2 teaspoons honey
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 pounds shaved Brussels sprouts (these can be purchased in bags in the produce section or you can use your food processor to make fresh)
1/3 cup chopped dried apricots
1/3 cup chopped hazelnuts
1/3 cup diced pecorino

Steps:

  • For the vinaigrette: In a medium bowl, combine the lemon juice, orange juice and shallots. Let stand 5 minutes so the acidity in the juice can begin to break down the shallots. Whisk in the Dijon and honey until well combined. Slowly whisk in the oil until emulsified. Season aggressively with salt and add pepper.
  • For the salad: Add the sprouts, apricots, hazelnuts and pecorino to the vinaigrette and toss to coat. The salad can be dressed 15 to 20 minutes in advance if you like more tender Brussels sprouts.

Tips:

  • Prep the Brussels Sprouts: Trim and shred the Brussels sprouts for a uniform texture and easier eating. Use a food processor with a shredding disc or a sharp knife for precise results.
  • Choose Complementary Ingredients: Consider the flavors and textures of the other ingredients in the salad. Add crunchy elements like walnuts or almonds, sweet components like dried cranberries or apples, and creamy additions like crumbled cheese or avocado to create a balanced and satisfying dish.
  • Make a Flavorful Dressing: The dressing is key to bringing all the flavors together. Experiment with different combinations of olive oil, vinegar, citrus juice, mustard, honey, or herbs to create a dressing that complements the other ingredients.
  • Use Fresh Herbs: Fresh herbs like parsley, cilantro, or mint can add a burst of flavor and color to the salad. Chop them finely and sprinkle them on top just before serving for maximum impact.
  • Don't Overdress the Salad: Add the dressing just before serving and toss gently to coat the ingredients evenly. Overdressing can make the salad soggy and dilute the flavors.

Conclusion:

Shredded Brussels sprout salad is a versatile and delightful dish that offers a unique combination of flavors and textures. With its vibrant colors and nutritional value, it's a perfect addition to any meal. Whether you prefer a simple dressing or a more elaborate one, the possibilities are endless. Experiment with different ingredients and dressings to create a salad that suits your taste preferences. Enjoy this healthy and delicious salad as a side dish or as a light main course.
