Tips:

  • Choose the right kale: For this recipe, curly kale or lacinato kale (also known as Tuscan kale or dinosaur kale) works best. Both have a sturdy texture that can hold up to the cooking process.
  • Prep the kale properly: Before using, remove the tough stems from the kale leaves and roughly chop them. You can also de-rib the kale by removing the center rib from each leaf, which makes it easier to eat.
  • Cook the lentils until tender: Lentils should be cooked until they are tender but still hold their shape. This usually takes about 20-30 minutes. You can cook them in a pot on the stovetop or in a slow cooker.
  • Shred the chicken: You can shred the chicken using two forks, a meat shredder, or a stand mixer fitted with the paddle attachment.
  • Use a flavorful broth: The broth you use to cook the lentils will add flavor to the dish, so choose a broth that you enjoy the taste of. Chicken broth, vegetable broth, or bone broth are all good options.
  • Season to taste: Once the dish is cooked, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, or other spices to suit your taste.

Conclusion:

Shredded chicken with kale and lentils is a delicious and healthy meal that is perfect for any occasion. It is packed with protein, fiber, and vitamins, and it is also relatively easy to make. With a few simple tips, you can create a delicious and satisfying dish that the whole family will enjoy.
