Pasta with Feta Cheese, Shrimp and Broccoli Recipe image

Number Of Ingredients 8

12 oz. pkg. fettuccine pasta (spinach fettuccine can be used for color)
1/2 cup olive oil
1 cup chicken stock
1/2 # Feta cheese (crumbled)
1 tsp. fresh ground pepper
2-3 cloves garlic, crushed
1 - 1 1/2 lb. cooked shrimp
1 16 oz. bag broccoli florets (cooked)

Steps:

  • In med. bowl, combine oil, chicken stock, crumbled feta cheese and black pepper. Mix well. Crush garlic in press, add to feta sauce and set aside. Cook pasta according to directions. Drain pasta, add shrimp and broccoli. Place in large bowl and toss with feta sauce.

Tips:

  • Choose the freshest shrimp possible. Look for shrimp that are firm, translucent, and have a slight briny smell. Avoid shrimp that are limp, discolored, or have a strong fishy odor.
  • Cook the shrimp properly. Shrimp should be cooked quickly over high heat until they are opaque and pink. Overcooking will make them tough and rubbery.
  • Use a variety of vegetables. This recipe calls for broccoli and sun-dried tomatoes, but you can use any vegetables that you like. Some other good options include bell peppers, zucchini, mushrooms, and asparagus.
  • Don't be afraid to experiment with different types of cheese. Feta cheese is a classic choice for shrimp pasta, but you could also use Parmesan, cheddar, or Gruyère.
  • Serve the pasta immediately. Shrimp pasta is best when it is served hot and fresh.

Conclusion:

Shrimp and feta cheese pasta is a quick and easy meal that is perfect for a weeknight dinner. It is also a versatile dish that can be customized to your own taste. Try this recipe today and see for yourself how delicious it is!
