VEGETABLE (OR SHRIMP) SATAY SKEWERS

Vegetable (or Shrimp) Satay Skewers image

Not only a great meal, shrimp satay is fun finger food and a super addition to any party tray. Use leftover peanut sauce, thickened with tangy black bean sauce and livened up with hot sauce and you've got a great dip for skewered shrimp. The sauce is perfect with vegetables too. I like to serve this dish with Asian noodles or rice and snap peas on the side.

DILL AND GARLIC SHRIMP SKEWERS

Dill and Garlic Shrimp Skewers image

Categories     Garlic     Shrimp     Dill     Gourmet

Yield Serves 6

Number Of Ingredients 8

18 large garlic cloves, unpeeled
1 tablespoon dill seeds
2 tablespoons minced fresh dill
2 tablespoons fresh lemon juice
1/2 teaspoon dried hot red pepper flakes
2/3 cup vegetable oil
eighteen 8-inch wooden skewers, soaked in warm water for 1 hour
18 large shrimp, shelled

Steps:

  • In a saucepan of boiling water boil the garlic for 15 to 20 minutes, or until it is tender but not soft, drain it, and discard the peel carefully, leaving the cloves whole. In a bowl whisk together the dill seeds, the fresh dill, the lemon juice, and the red pepper flakes, add the oil in a stream, whisking, and whisk the marinade until it is emulsified. Onto the end of each skewer thread a shrimp and 1 garlic clove. Arrange the skewers, shrimp end down, in a bowl just large enough to hold them. Pour the marinade over the shrimp, and let the shrimp marinate, cover loosely and chilled, basting them occasionally, for 3 hours. Drain the shrimp, arrange them in a shallow baking pan, and bake them in the upper third of a preheated 425°F. oven for 1 to 2 minutes, or until they are just cooked through.

Tips:

  • Choose fresh, high-quality shrimp. Look for shrimp that are firm and have a slight briny smell. Avoid shrimp that are mushy or have a strong fishy odor.
  • Soak the wooden skewers in water for at least 30 minutes before using. This will help to prevent them from burning.
  • Skewer the shrimp and vegetables tightly, so that they don't fall off when you're cooking them.
  • Cook the skewers over medium heat, turning them frequently. This will help to ensure that the shrimp and vegetables are cooked evenly.
  • Serve the skewers with your favorite dipping sauce. Some popular options include tartar sauce, cocktail sauce, and tzatziki sauce.

Conclusion:

Shrimp and vegetable skewers are a delicious and easy-to-make appetizer or main course. They're perfect for parties, picnics, or any other casual gathering. With a variety of marinades and dipping sauces to choose from, there's a flavor combination to suit everyone's taste. So next time you're looking for a quick and easy meal, give shrimp and vegetable skewers a try. You won't be disappointed!
