1 cup diced fresh ripe mango
2 tablespoons BBQ sauce
1 tablespoon honey
1 tablespoon lime juice
1/2 teaspoon kosher salt
Vegetable oil, for frying
1/2 cup cornstarch
1/2 cup all-purpose flour

SHRIMP WITH COCONUT MILK SAUCE

Shrimp With Coconut Milk Sauce image

Easy, healthy, yummy seafood recipe. I grew up eating a lot of seafood cooked in a many different ways. Cooking them with coconut is a favorite savory treat. You can make this as spicy as you want by adding green peppers like anaheim or jalapeno peppers. You can omit the vegetables or add more that you like. The coconut milk and seasonings are strong enough flavor to carry this dish. If I am feeling lazy, I even skip the saute step.

Tips:

  • Use fresh ingredients whenever possible. Fresh shrimp, vegetables, and coconut milk will give your dish the best flavor.
  • Don't overcook the shrimp. Shrimp cooks quickly, so be careful not to overcook it, or it will become tough and rubbery.
  • Use a variety of vegetables. This dish is a great way to use up leftover vegetables. You can use any vegetables you like, but some good options include broccoli, carrots, bell peppers, and snap peas.
  • Make sure the coconut milk is unsweetened. Sweetened coconut milk will make your dish too sweet.
  • Serve the dish over rice or noodles. This dish is traditionally served over rice or noodles, but you can also serve it over quinoa or another grain.

Conclusion:

Shrimp and vegetables with coconut sauce is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover vegetables. With its combination of fresh shrimp, vegetables, and creamy coconut sauce, this dish is sure to please everyone at the table.
