Number Of Ingredients 12

4 tablespoons vegetable oil
1 tablespoon ginger, minced, separated
4 garlic cloves, minced, separated
1/2 teaspoon onion salt, separated
1 lb shrimp, cooked, cleaned
2 stalks celery, sliced
1 cup broccoli, chopped
12 asparagus spears, broken off at soft spot, tallowy ends discarded
1 green pepper, chopped
2 cups mushrooms, sliced
4 large green onions, chopped, white and green parts separated
2 heads baby bok choy, chopped

Steps:

  • Using an electric wok at high setting, heat 2 tbsp oil, ½ tbsp ginger and 2 tbsp garlic, until sizzling.
  • Cook shrimp until heated through, drizzle with ¼ tsp onion salt. Set aside.
  • Clean wok and add 2 tbsp oil, ½ tbsp ginger and 2 tbsp garlic and bring to a sizzle at high heat.
  • Add celery, broccoli, asparagus and green pepper, cook for 5 minutes, stirring occasionally.
  • Toss in the mushrooms and white part of green onions and cook for 3 minutes.
  • Toss in the green part of green onion and the baby bok choy and ¼ tsp onion salt and cook for another 2 minutes.
  • Add cooked shrimp, toss and serve over rice or noodles or by itself.

Tips:

  • Prep Ingredients in Advance: Before you start cooking, wash and chop all the vegetables and devein the shrimp. This will save you time and ensure that everything cooks evenly.
  • Use a Large Wok or Pan: A large wok or pan will allow you to stir-fry the ingredients without overcrowding them. This will help them cook evenly and prevent them from steaming.
  • Heat the Wok or Pan Over High Heat: High heat is essential for stir-frying. It will help to sear the vegetables and shrimp and give them a nice smoky flavor.
  • Add the Ingredients in Stages: Don't add all the ingredients to the wok or pan at once. Add them in stages, starting with the vegetables that take the longest to cook. This will ensure that everything cooks evenly.
  • Stir-Fry Constantly: Once you've added the ingredients to the wok or pan, stir-fry them constantly. This will help to prevent them from sticking to the pan and will also help to evenly distribute the heat.
  • Don't Overcook the Ingredients: Stir-fries are meant to be cooked quickly. Overcooking the ingredients will make them tough and rubbery.
  • Serve Immediately: Stir-fries are best served immediately. This will ensure that they are hot and fresh.

Shrimp and veggie stir-fry is a delicious and healthy dish that is perfect for a quick and easy meal. With its vibrant colors and flavors, it's sure to be a hit with the whole family.
