Time 3h

Yield 12

Number Of Ingredients 13

1 cup butter
½ cup minced garlic
1 small red onion, chopped
1 tablespoon Cajun seasoning
1 tablespoon cayenne pepper
1 tablespoon crushed red pepper flakes
1 pound uncooked shrimp, peeled and cut into pieces
1 ½ (8 ounce) packages cream cheese, softened
1 teaspoon liquid smoke flavoring
1 teaspoon lemon juice
½ cup chopped pecans
1 bunch fresh parsley, chopped
½ cup chopped pecans

Steps:

  • Melt the butter in a large skillet over medium heat. Stir in the garlic, onion, Cajun seasoning, cayenne pepper, and red pepper flakes; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the shrimp. Cook the shrimp until they are bright pink on the outside and the meat is no longer transparent in the center, about 5 minutes. Drain and discard any excess grease. Set aside.
  • Mix cream cheese, liquid smoke, and lemon juice in a large bowl. Stir in the shrimp and 1/2 cup of pecans, mixing until evenly distributed. Roll the mixture into a ball. Cover with plastic wrap and refrigerate until slightly firm, about 30 minutes. Mix the parsley with the remaining 1/2 cup of pecans in a bowl. Roll the cheese ball in the parsley mixture until the ball is covered. Cover and refrigerate the cheese ball until completely firm, about 2 hours.

Categories     Seafood Appetizers

Time 10m

Number Of Ingredients 4

1 can(s) baby shrimp
1 pkg 8 oz cream cheese
1 bottle cocktail sauce
1 box crackers (your choice. i usually use a party mix)

Steps:

  • 1. Set cream cheese out to soften
  • 2. Open canned shrimp and rinse thoroughly
  • 3. Dry shrimp using paper towels. IMPORTANT-be sure to dry completely
  • 4. In a medium bowl, add soften cream cheese and shrimp. Mix together until thoroughly combined
  • 5. Using a spatula, scrape sides of bowl and form mixture into a ball in the bottom of the bowl
  • 6. Remove ball to a serving platter. Hollow out the center to accommodate the full bottle of cocktail sauce. Place in fridge until ready to serve.
  • 7. When ready to serve, pour bottle of cocktail sauce into hollow of the ball. Surround with crackers and serve.
  • 8. If you don't care for cocktail sauce, you can add a TBS or 2 of finely minced scallions, greens included, and a bit of fresh garlic finely minced. I've also used fresh basil, finely chopped, when not using cocktail sauce. All have been very good. Experiment with whatever spices you enjoy. The cream cheese and shrimp is a very tasty combination. Cream cheese is very fun and versatile for a great snack. I've served blocks of cream cheese with hot pepper jelly poured over them and crackers...very yummy! Finely chopped ham, or a can of deviled ham, and cream cheese also works very well together. Mix in a bit of pickle relish and you have a great sandwich spread.

SHRIMP CHEESE BALL

Shrimp Cheese Ball image

Jo Magram prepared this Daddy-O recipe for our June 2014 meeting.

Provided by Club Recipes

Categories     Cheese Appetizers

Number Of Ingredients 9

2 pinch (8-ounce) packages cream cheese, room temperature
1 can(s) (6-ounce) small cooked shrimp
1 can(s) (6-ounce) can black olives, drained and chopped
seasoning salt to taste
lemon juice to taste
3 small green onions, finely chopped
chopped nuts
chopped fresh parsley
assorted crackers

Steps:

  • 1. In a large bowl, mash cream cheese with a fork. Add shrimp, black olives, seasoning salt, lemon juice, and green onions; stir until well blended. With your hands, form cheese mixture into a large ball. In a small bowl, combine nuts and parsley; roll cheese ball in nut mixture to coat completely. Cover with plastic wrap and refrigerate until ready to serve. Serve with assorted crackers. Yields 1 ball.
  • 2. Note: Since this was for a larger crowd, I mixed all above and spread on 1/2 cut mini sweet peppers and crackers. This was done for ease in buffet line.
  • 3. Added thought: Can add "Old Bay" seasoning and/or a little heat if you desire. Can also substitute shrimp for crab, etc.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and avoid scrambling during the cooking process.
  • Use Fresh Ingredients: The fresher your ingredients, the better your shrimp balls will taste. Look for plump, firm shrimp and fresh vegetables.
  • Season Generously: Don't be afraid to season your shrimp balls liberally. A good balance of salt, pepper, and garlic powder will help bring out the flavor of the shrimp.
  • Don't Overcook the Shrimp: Shrimp cooks quickly, so be careful not to overcook it. Otherwise, it will become tough and rubbery.
  • Serve Immediately: Shrimp balls are best served hot and fresh out of the fryer. Serve them with your favorite dipping sauce, such as sweet and sour sauce or tartar sauce.

Conclusion:

Shrimp balls are a delicious and versatile appetizer or main course. They are easy to make and can be enjoyed by people of all ages. With their crispy exterior and tender, juicy interior, shrimp balls are sure to be a hit at your next party or gathering. So next time you're looking for a quick and easy seafood dish, give shrimp balls a try. You won't be disappointed!
