SHRIMPIN DIPPIN BROTH - BUBBA GUMP SHRIMP CO.

Shrimpin Dippin Broth - Bubba Gump Shrimp Co. image

This is one recipe I NEVER want to lose! Prepared on Eyewitness News Midday by Dave Trombetta of the Bubba Gump Shrimp Co. so it's definitely OK to post & share. This is one of the most delicious Shrimp recipes. I love it because you get plenty of broth to sop up with your bread, and it's SO flavorful. Definitely Cajun, so not for people who don't like spicy food. Enjoy & please post reviews! Cooking time may vary, based on type of rice you choose to serve, so cooking time does not include rice cooking time. Preparation time assumes you have shrimp that has been peeled and deveined for you. Cooks very quickly! I made this recently and doubled it, but I found that the flavor was diluted. If anyone makes this and is able to successfully double/triple the recipe with the same amount of flavor, pls post in your comment/review. I personally would like to have MORE broth than what this makes just like you get at the restaurant. It is spicy!

Time 40m

Number Of Ingredients 10

3/4 cup mayonnaise
1 1/2 pounds large shrimp (26 to 30), peeled, deveined, and butterflied
1/4 cup minced celery
2 tablespoons dill relish, such as Heinz
1 1/2 teaspoons fresh lemon juice, plus wedges for serving
Kosher salt and freshly ground pepper
Vegetable oil, for frying
3/4 cup fine yellow cornmeal
4 soft hoagie or French rolls, split
Shredded iceberg lettuce, sliced tomato, and hot sauce, for serving

Steps:

  • Stir together 1/4 cup mayonnaise, 2 teaspoons water, and shrimp. In another bowl, combine 1/2 cup mayonnaise, celery, relish, and lemon juice; season with salt and pepper.
  • Heat a heavy pot with 2 inches of oil over medium-high until a deep-fry thermometer reads 375 degrees. Season cornmeal with salt and pepper. Remove shrimp from mayo mixture, letting excess drip off; toss in cornmeal mixture. Working in batches, lift shrimp to let excess cornmeal fall off; add to oil. Fry, stirring occasionally, until golden brown, about 2 minutes a batch. Transfer to a wire rack set over a baking sheet; season with salt. Lightly toast rolls; spread split sides with remoulade. Top with lettuce, tomato, and shrimp; serve with hot sauce and a squeeze of lemon.

Tips:

  • Use fresh shrimp. Fresh shrimp will have a sweeter, more delicate flavor than frozen shrimp.
  • Clean the shrimp properly. Remove the heads, tails, and shells from the shrimp. Devein the shrimp by making a shallow cut down the back of each shrimp and removing the dark vein.
  • Season the shrimp well. Season the shrimp with salt, pepper, and any other desired spices. You can also marinate the shrimp in a flavorful liquid, such as olive oil, lemon juice, or wine.
  • Cook the shrimp properly. Shrimp can be cooked in a variety of ways, including boiling, frying, grilling, and baking. Be careful not to overcook the shrimp, as this will make them tough and rubbery.
  • Serve the shrimp with a variety of dipping sauces. Popular dipping sauces for shrimp include cocktail sauce, tartar sauce, and remoulade.
