SUMMER SHRIMP SCAMPI WITH LINGUINI
I adapted this dish from a Tyler Florence recipe one evening while trying to come up with a way to use an abundance of fresh basil and tomatoes from my garden. I had made a batch of fresh pesto with toasted pine nuts the day before. You can make your own or use ready made from the grocers. AND I used large frozen shrimp (lets face it, most grocers more than 25 minutes from the ocean only sell frozen anyway!). The combination of shrimp and tomatoes with a little garlic and basil seemed like a natural for a summer evening dinner. Add a little toasted sour dough garlic bread. My family polished off the whole platter.

CLASSIC SHRIMP SCAMPI
Scampi are tiny, lobster-like crustaceans with pale pink shells (also called langoustines). Italian cooks in the United States swapped shrimp for scampi, but kept both names. Thus the dish was born, along with inevitable variations. This classic recipe makes a simple garlic, white wine and butter sauce that goes well with a pile of pasta or with a hunk of crusty bread. However you make the dish, once the shrimp are added to the pan, the trick is to cook them just long enough that they turn pink all over, but not until their bodies curl into rounds with the texture of tires.

Tips:
- Use fresh shrimp: Fresh shrimp has a sweeter, more delicate flavor than frozen shrimp. If you're using frozen shrimp, thaw it completely before cooking.
- Don't overcook the shrimp: Shrimp cooks very quickly, so it's important not to overcook it. Cook the shrimp for just a few minutes per side, or until it's pink and opaque.
- Use a good quality olive oil: Olive oil is a key ingredient in shrimp scampi, so it's important to use a good quality oil. Look for an extra virgin olive oil that has a fruity, peppery flavor.
- Add some white wine: White wine adds a bright, acidic flavor to shrimp scampi. Use a dry white wine, such as Sauvignon Blanc or Pinot Grigio.
- Don't forget the garlic: Garlic is another essential ingredient in shrimp scampi. Use fresh garlic cloves, minced or pressed.
- Add some red pepper flakes: Red pepper flakes add a little bit of heat to shrimp scampi. If you don't like spicy food, you can omit the red pepper flakes.
- Serve with a side of pasta: Shrimp scampi is traditionally served with a side of pasta. Linguine, spaghetti, and fettuccine are all good choices.
Conclusion:
Shrimp scampi is a quick and easy dish that is perfect for a weeknight meal. It's also a great dish to serve guests. With its simple ingredients and delicious flavor, shrimp scampi is sure to be a hit.
