Number Of Ingredients 17

8 ounces Chinese egg noodles (linguine can be substituted)
1 fresh jalapeno pepper, diced
1 tablespoon plus 1 teaspoon sesame oil
1 teaspoon salt
1/4 teaspoon freshly ground pepper
3 medium shallots (2 1/2 ounces total), peeled and minced
2 tablespoons minced fresh ginger
1 tablespoon minced garlic
2 tablespoons reduced-sodium soy sauce
1/2 cup homemade or low-sodium canned chicken stock, skimmed of fat
Nonstick cooking spray
12 ounces boneless, skinless chicken breast (2 breast halves), cut into 1 1/2-inch pieces
2 scallions, trimmed, white and light-green parts only, thinly sliced
1 bunch broccoli rabe (about 1 1/2 pounds), trimmed and blanched
4 Thai chile peppers or 1 medium jalapeno pepper
1 cup finely shredded green cabbage
8 ounces medium shrimp, peeled and deveined

Steps:

  • Fill a large saucepan with water and bring to a boil. Stir in noodles and cook until just tender, about 3 to 7 minutes, or according to package instructions. Remove from heat, drain, and transfer to a large bowl. Add jalapeno, 1 tablespoon sesame oil, salt, and pepper. Toss well to combine and set aside.
  • In a small bowl combine shallots, ginger, garlic, soy sauce, and stock; set aside.
  • Spray a large nonstick skillet with cooking spray and place over medium heat. Using tongs or a fork, transfer about a sixth of the noodles into skillet. Press noodles down with the back of a spatula and cook until crisp and golden, about 4 to 5 minutes; the noodles will cook together and form a pancake. Turn noodles over and cook the other side for 4 to 5 minutes more. Carefully transfer noodle pancake to a baking sheet and set in a low oven to keep warm. Repeat the process, cooking a sixth of the noodles at a time, until 6 pancakes have been formed.
  • Return skillet to medium heat and add the remaining teaspoon sesame oil. Add the chicken and cook, tossing often, until golden brown all over, 5 to 7 minutes. Transfer chicken to a small bowl. Cover with foil to keep warm.
  • Add scallions, broccoli rabe, chile peppers, and cabbage to skillet. Pour the reserved ginger-stock mixture over vegetables, raise heat to high, and cook until vegetables are limp and tender, about 3 to 5 minutes. Return chicken to skillet and add shrimp. Cook, stirring often, until shrimp is pink and opaque and chicken is hot, about 3 to 5 more minutes.
  • Remove the noodle pancakes from oven and place one on each of 6 plates. Divide the stir-fry among the pancakes and serve immediately.

Shrimp and Noodle Stir Fry image

Categories     Wok     Garlic     Ginger     Mushroom     Onion     Shellfish     Stir-Fry     Quick & Easy     Shrimp     Jícama     Bok Choy     Gourmet

Yield Serves 4

Number Of Ingredients 15

6 ounces bean thread noodles (preferably 1/8 to 1/4 inch wide)
3 tablespoons peanut or vegetable oil
1 medium onion, thinly sliced
1 teaspoon minced peeled fresh ginger
1/2 teaspoon dried hot red pepper flakes
12 fresh shiitake mushrooms, coarse stems removed and caps halved
4 heads baby bok choy (1pound total), leaves removed and bulb cut into thin wedges
4 scallions, cut diagonally into 1-inch pieces
1 pound large shrimp, shelled
2 cups chicken broth
2 garlic cloves, minced
1 tablespoon Asian sesame oil
1 small jícama (1 pound), peeled and cut into 2-inch-long julienne
1/2 cup fresh cilantro leaves
Accompaniment: lime wedges

Steps:

  • Soak noodles in cold water to cover 15 minutes. Drain and cut in half with scissors.
  • Heat a wok or large heavy skillet over high heat until a bead of water dropped on cooking surface evaporates immediately. Swirl 1 tablespoon peanut oil in wok to coat evenly and heat until just smoking. Stir-fry onion, ginger, and red pepper flakes 1 minute. Add mushrooms and stir-fry until just tender, about 2 minutes. Transfer mixture to a large bowl and season with salt.
  • Swirl another tablespoon peanut oil in wok to coat evenly and heat until just smoking. Stir-fry bok choy until barely tender, then add scallions and salt to taste and stir-fry until bok choy is crisp-tender. Add to mushroom mixture.
  • Pat shrimp dry and season with salt. Swirl remaining tablespoon peanut oil in wok and heat until just smoking. Stir-fry shrimp 2 minutes, or until just cooked through, and transfer to bowl with vegetables.
  • Add broth and garlic to wok and bring to a boil. Stir noodles into broth and boil until tender and most of broth is absorbed, 4 to 5 minutes.
  • Return shrimp and vegetables to wok and stir-fry until heated. Stir in sesame oil, jícama, and salt to taste.
  • Serve stir-fry sprinkled with cilantro leaves.

Tips:

  • Prep your ingredients in advance: Chop your vegetables, mince your garlic and ginger, and whisk together your sauce ingredients before you start cooking. This will help you save time and ensure that your stir-fry is cooked evenly.
  • Use a large skillet or wok: This will give you plenty of room to toss the noodles and vegetables without overcrowding the pan.
  • Cook the noodles according to the package directions: Be sure to rinse the noodles well after cooking to remove any excess starch.
  • Don't overcrowd the pan: Cook the shrimp and vegetables in batches if necessary to avoid overcrowding the pan. This will help them cook evenly and prevent them from steaming.
  • Use a high heat: Stir-fries are best cooked over high heat to ensure that the vegetables stay crisp and the shrimp are cooked through quickly.
  • Toss the noodles and vegetables frequently: This will help them cook evenly and prevent them from sticking to the pan.
  • Add the sauce at the end: Stir in the sauce just before serving to prevent the noodles and vegetables from becoming soggy.
  • Serve immediately: Stir-fries are best served immediately after cooking.
