1 clove garlic, minced
Freshly ground pepper
Grated zest of 2 lemons, plus 1/4 cup fresh lemon juice
4 scallions, thinly sliced

ONE-POT ORZO WITH SHRIMP, TOMATO AND FETA

One-Pot Orzo With Shrimp, Tomato and Feta image

Inspired by a Greek appetizer, shrimp saganaki, this one-pot recipe adds orzo and grape tomatoes to make a complete meal. Blistering the grape tomatoes coaxes out their natural sweetness, which pairs well with the salty feta. For a vegetarian version, skip the shrimp and stir in some spinach or arugula at the end. Warm up leftovers by adding a splash of water to loosen the sauce, then drizzle with olive oil and sprinkle with crumbled feta.

  • Use fresh, high-quality ingredients: The fresher your ingredients, the better your dish will taste. Whenever possible, use organic or locally-sourced ingredients.
  • Don't overcrowd the pan: When cooking shrimp, orzo, or any other ingredient, make sure you don't overcrowd the pan. This will prevent the food from cooking evenly and will make it more likely to stick to the pan.
  • Season your food: Don't be afraid to season your food with salt, pepper, and other herbs and spices. This will help to bring out the natural flavors of the ingredients.
  • Don't overcook the shrimp: Shrimp cooks very quickly, so it's important to not overcook it. Otherwise, it will become tough and rubbery.
