1 lb shrimp (medium or large)
1 garlic clove (pressed or minced)
1/2 tsp sea salt
1/4 tsp black pepper
1/4 tsp ground cumin
1/4 tsp cayenne pepper
1 Tbsp olive oil
8 white corn tortillas ((small, 6" diameter), or Hard Taco Shells)
1/2 small purple cabbage (2 cups shredded)
1 large avocado (pitted, peeled and diced)
1/2 red onion (diced)
4 oz Cotija cheese ((1 cup grated on a box grater))
1/4 bunch cilantro (coarsely chopped)
1 lime (cut into 8 wedges)
1/3 cup sour cream
1/3 cup mayonnaise
1 1/2 Tbsp lime juice (squeezed from 1 medium lime)
3/4 tsp garlic powder
3/4 tsp Sriracha sauce (or to taste)

Steps:

  • Thaw and pat dry shrimp with paper towels and place in a medium bowl. Add seasonings and garlic and stir to combine.
  • Place a large non-stick pan over medium-high heat. Add 1 Tbsp olive oil and add shrimp in a single layer. Sauté 1-2 minutes per side or just until cooked through. As soon as they are cooked through (white inside with some pink and red accents outside), transfer to a serving platter and set aside to cool.
  • Toast 8 tortillas over an open gas stovetop flame on medium/low heat (about 10 seconds per side) until lightly charred on the edges (or on a medium-hot skillet or griddle) until golden brown in some spots (30 seconds per side).
  • Thinly slice cabbage, dice the avocado, finely dice the red onion, and coarsley chop the cilantro. Add these to your serving platter along with lime wedges. Build tacos by arranging toppings and shrimp over each toasted tortilla.

1/2 cup mayonnaise
2 tablespoons pickled jalapeno peppers, minced
2 tablespoons red onions, minced

1 1/2 teaspoons lime juice
1 cup green cabbage, shredded
1 cup red cabbage, shredded
3 tablespoons olive oil, divided
8 corn tortillas
5 teaspoons chili powder

24 shrimp, peeled and deveined with tails removed

Steps:

  • Preheat oven to 400.
  • Stir together maynnaise, jalapenos, onion, cilantro, capers, and lime juice for the tartar sauce.

1 pound all-purpose flour
2 tablespoons ground black pepper
1 tablespoon sea salt
2 teaspoons Cajun seasoning
1/2 teaspoon onion powder
2 eggs
One 12-ounce can evaporated milk
2 pounds shrimp, tails on, peeled and deveined
Tartar Sauce, recipe follows
1 cup mayonnaise
1 tablespoon dried minced onion
1 tablespoon dill relish
2 teaspoons dried dillweed
1 teaspoon ground black pepper
1 teaspoon sweet relish

Steps:

  • Fill a heavy bottomed deep pan like a Dutch oven with peanut oil. Fit with a deep-frying thermometer and heat to 360 degrees F.
  • Mix together the flour, pepper, salt, Cajun seasoning and onion powder in a bowl.
  • Beat the eggs in a separate bowl, then slowly beat in the evaporated milk.
  • Line a sheet pan with paper towels. Put a cooling rack on top.
  • Dip some shrimp into the egg/evaporated milk mixture, then toss into the seasoned flour. Shake off excess flour. Slowly lower into hot oil and fry until golden brown and delicious, about 3 minutes. Remove with a slotted spoon to cooling rack. Let oil come back to 360 degrees F. Repeat with remaining shrimp, egg mixture and seasoned flour. Serve with Tartar Sauce.
  • Mix together the mayonnaise, onion, pepper, dill relish, dillweed, pepper and sweet relish. Serve on the side with the shrimp.

1 quart vegetable oil, for frying
1/2 cup white rice flour
1/2 cup beer
1 pound peeled and deveined large shrimp, tail-on
Kosher salt and freshly cracked black pepper
Tartar Sauce, recipe follows, for serving
3/4 cup mayonnaise
1 tablespoon minced fresh dill
1 tablespoon minced cornichons
1 tablespoon white wine vinegar
2 teaspoons chopped capers (rinsed and drained)
1 teaspoon Dijon mustard
Kosher salt and freshly cracked black pepper

Steps:

  • Pour the oil into a heavy-bottomed pot fitted with a deep-frying thermometer. Heat over medium-high heat to 375 degrees F. Line a baking sheet with paper towels and top with a cooling rack.

1 teaspoon paprika
1 teaspoon garlic powder

½ teaspoon red pepper flakes

24 skewers, bamboo or metal
4 tablespoons olive oil
24 corn tortillas
1 cup sour cream
3 tablespoons fresh cilantro, minced
1 teaspoon lime zest
¼ teaspoon salt
2 tablespoons lime juice
1 ½ cups green cabbage
1 ½ cups red cabbage
1 tablespoon jalapeño, minced
