TUNA WITH CITRUS VINAIGRETTE OVER COUSCOUS

- Set the tuna steaks in a glass or porcelain dish. Blend 2 tab. olive oil, rice wine vinegar, soy sauce, ginger and dried pepper flakes. Add tuna steaks and marinate for as long as possible.
- Meanwhile in a glass bowl combine the orange and lemon juice, cumin, 2 tab olive oil and orange supremes.
- Broil or grill tuna for 3 minutes a side; you want the tuna rare. Cut it into thin strips and set over couscous; garnish with oranges and fresh mint.
SICILIAN-INSPIRED TUNA WITH SPICY COUSCOUS
Steps:
- Over medium-high heat, add 1 tablespoon of oil in a 12-inch skillet with sides at least 2 inches high. Heat until oil is hot enough to sizzle a drop of water. Salt and pepper tuna fillets, and sear in the oil, 3 minutes per side. The fish will still be red in the center. Set fillets aside, loosely tented with tin foil, and from residual heat they will cook until the centers are pink. Turn heat to medium, add remaining oil, garlic, and chili, and tomatoes, and saute 2 minutes to let flavors mix. Next add scallions, olives, and lemon zest, and toss briefly. Pour reserved tomato juice and water into pan to deglaze, stirring and scraping up bits with a wooden or nylon spatula. Add the Israeli couscous, stir to mix, cover, and simmer over medium-low heat for 10 minutes. After this time, the couscous will be slightly al dente, and all but approximately 1/2 cup of the liquid will be absorbed. To serve, stir the remaining liquid into the couscous, divide it between two plates, top each with a tuna fillet. Garnish with mint or parsley, feta, and pine nuts if desired.

TUNA SALAD "SICILIAN STYLE"
I created this after years of trial and error. It is healthy and tastes great too! I like to add 1 tablesppon chopped pickled jalapeño peppers for an added zest! I have kids now so I will leave that out! I hope you enjoy!

- Marinate tuna:
- Combine oil, lemon juice, anchovies, garlic, oregano, and tuna in a large sealable bag and seal bag, pressing out excess air. Let stand at room temperature, turning occasionally, 30 minutes.
- Grill tuna:
- Remove tuna from marinade and shake off any excess. Lightly oil grill pan and heat over medium-high heat until smoking. Grill tuna, turning once, until pale pink in center, 5 to 7 minutes. Transfer to a platter and cover with foil to keep warm.
- Meanwhile, make sauce:

- Heat olive oil in a heavy-bottomed skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue to cook and stir until the onion is very tender and dark brown, 15 to 20 minutes more. Remove the onion from the skillet.
