SICILIAN SPAGHETTI SAUCE (RAGU) NO SUGAR ADDED

Sicilian Spaghetti Sauce (Ragu) No Sugar Added image

This a terrific recipe with no added sugar because tomatoes contain sufficient sugar to make it naturally sweet. We'll put this on pasta not pancakes! It comes from the Sicilian Culture website. Try it and you will see. I also sub 1 lb cooked chicken (if using cooked chicken, cook sauce for complete time and add chicken just prior to serving), or 1 lb Italian hot sausage for the ground beef.

SICILIAN SPAGHETTI SAUCE (MOM'S)

Number Of Ingredients 12

1/2 pound mild Italian sausage
1/2 pound lean ground beef
1 large onion, chopped
2 cloves garlic
4 cans tomato sauce (8 oz)
1 can Italian style tomato paste (6 oz)
3 cups water
1/4 cup sugar
1 teaspoon salt
1 teaspoon dried parsley
1 teaspoon dried basil
1/4 to 1/2 teaspoon ground red pepper

Steps:

  • Remove casings from sausage and discard.
  • Cook sausage and ground beef in a large skillet or Dutch oven over medium heat for 6 minutes, stirring until meat crumbles.
  • Add onion and garlic, and saute 4 minutes or unti beef and sausage are no longer pink.
  • Drain and set aside. Wipe skillet clean.
  • Combine sauce and next 7 ingredients in skillet or Dutch oven; cook, stirring occassionally, 1 hour.
  • Add sausage mixture. Cook, stirring occassionally, 1 hour and 30 minutes or until mixture thickens.

Tips:

  • Use fresh, ripe tomatoes: This will give your sauce the best flavor. If you can't find fresh tomatoes, you can use canned tomatoes, but make sure they are high-quality and packed in tomato juice, not water.
  • Don't overcrowd the pot: When you're cooking the tomatoes, don't overcrowd the pot. This will prevent the tomatoes from cooking evenly and will make the sauce watery.
  • Simmer the sauce for at least 30 minutes: This will allow the flavors to meld and develop.
  • Add a little sugar to the sauce: This will help to balance the acidity of the tomatoes.
  • Season the sauce to taste: Add salt, pepper, garlic, and oregano to taste.
  • Serve the sauce over your favorite pasta: Spaghetti, penne, and rigatoni are all good choices.

Conclusion:

Sicilian spaghetti sauce is a delicious and versatile sauce that can be used on a variety of dishes. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy meal, give Sicilian spaghetti sauce a try. You won't be disappointed!
