Steps:

  • Heat oven to 400 degrees.
  • Lightly grease 10 inch pie plate.

2 cups shredded Monterey Jack cheese (8 oz)
1/2 cup Original Bisquick™ mix
2 eggs
1 cup milk
1/2 teaspoon salt

1 cup Old El Paso™ Thick 'n Chunky salsa (from 16-oz jar)
1/2 cup guacamole
1/2 cup sour cream

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate or 8-inch square (2-quart) glass baking dish with cooking spray.
  • In large bowl, mix chicken, corn, olives, onion, chiles and cheese. Spoon into pie plate. In medium bowl, mix Bisquick mix, eggs, milk, salt and pepper with whisk until tiny lumps remain. Pour evenly over chicken mixture.

1 onion, finely chopped
garlic powder to taste

1 (14.5 ounce) can diced tomatoes
1 (1.25 ounce) package taco seasoning mix
¾ cup hot water
1 (11 ounce) can whole kernel corn, drained
1 (8.5 ounce) package corn muffin mix
1 cup shredded Cheddar cheese
1 (2.25 ounce) can sliced black olives

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13 inch baking dish with cooking spray.
  • Place the beef and onion in a skillet over medium heat. Cook until beef is evenly brown and onion is tender. Drain grease. Season with garlic powder, salt, and pepper. Mix in the tomatoes, and cook 5 minutes. Stir in the taco seasoning and water. Bring to a boil, reduce heat to low, and continue cooking 5 minutes, until thickened. 1 large onion, chopped

1 (1 1/2 tablespoon) packet taco seasoning
1 (4 ounce) can green chilies
2 cups cheddar cheese
1 (15 ounce) can refried beans
4 ounces canned chipotle chiles in adobo, chopped
16 small corn tortillas, cut in half

Steps:

  • Heat oil in skillet over medium high heat.
  • Cook onions until translucent.
  • Add garlic, taco seasoning and ground beef, cook until brown.
  • Stir in green chilies.
  • Preheat oven to 400 degrees.
  • Lightly grease pie plate and cover bottom with 4 tortillas.
  • Layer in this order: 1/2 beef mixture, 1/2 cheese, 4 tortillas, beans, 4 tortillas, chipolte peppers, 4 tortillas, remaining beef, remaining cheese.

8 ounces salsa
1 (14 ounce) can refried beans
2 cups shredded Mexican blend cheese
1 cup sour cream
3 (10 inch) flour tortillas

Steps:

  • Brown ground beef in skillet.
  • Add salsa and salt to beef and mix well.
  • Place one tortilla in bottom of lightly greased 10" pie pan.
  • Spoon beef and salsa mixture on top of tortilla.
  • Sprinkle 3/4 cup of cheese on top of beef.
  • Place next tortilla on top of cheese.

1 (14 ounce) can pinto beans, drained and rinsed
8 ounces cheddar cheese (shredded, I used low-fat, separated)
1 teaspoon chili powder

3 green onions, chopped
1 tomatoes, chopped
1/3 cup salsa (I used hot)
2 eggs
1 teaspoon olive oil
12 ounces veggie crumbles (or ground beef)
1 shallot, chopped

Steps:

  • Add the pinto beans, half the cheese, chile, paprika, green onions, tomato and salsa. Mix to combine.

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
